Darn, I just canned up raspberry jam last night and hadn't checked TH-cam for new videos yet - wish I'd tried your recipe! I felt like I knew everything I needed to know about canning jam, but there's so much info here. The last batch of strawberry jam I made didn't set and I re-did it with lemon juice, fresh squeezed 😯 Didn't know not to do that! Next time I get a pile of raspberries I'll be trying this recipe for sure.
I always used to make jam with a ton of sugar and pectin until I learned the citrus peel trick! The low sugar is so much tastier because you can actually taste the fruit! If you like blueberry jam, you use the same recipe.
Raspberry jam is also my favorite and I thank you for sharing.

Yes! I made it with blueberries last year and it was delish! I used lemon rind and juice but still great!

So far two years and counting!
Do you need to use sugar or can I use erythritol?
I have never tried it, but you probably could.
