Raspberry Jam - Traditional Newfoundland - Bonita's Kitchen

  • Welcome to Bonita's Kitchen! Today we will be making Raspberry Jam, made with freshly picked raspberries from my sisters garden. See recipe below!

    Ingredients:
    4 Cups Fresh or Frozen Raspberries
    3½ Cups Sugar
    Method:
    1. Start by cleaning and straining your raspberries, if frozen let thaw.
    2. You will need a medium saucepan and start the heat to medium temperature.
    3. Add your raspberries and stir occasionally to release the juices and start to boil.
    4. After your raspberries have cooked for 3-4 minutes add your sugar.
    5. Continue the heat to medium and stirring occasionally until your berries start to condense.
    6. This will take 20-25 minutes you can mash the berries or leave them whole, you can also strain the berries to remove the seeds.
    7. Sterilize your Mason jars by soaking them in hot water for 30 minutes or boiling them for about 20 minutes.
    8. Remove from hot water start scooping your raspberry jam in each one while jam is hot, clean around rims to remove any jam or stickiness.
    9. Then place caps and lids on and tighten, you can leave at room temperature for overnight then check lids in the morning, or put back into hot water and boil for another 5 minutes to make sure they are sealed.
    10. Then remove for boiler and let set for overnight then check the caps in the morning.
    Please note:
    Raspberries are a sour berry and this is why you need equal amounts of sugar to berries. I have less in this batch only because I like my raspberry jam a little tart but you can also add some lemon juice to you berries while they are cooking to keep the tart taste. But if you find your jam is not thickening for you boil a little longer and you can add the extra cup of sugar. You can also mash your berries or leave them whole for more texture, if you don't want to bottle your jam you can freeze in freezer bags or containers.

    We just finished making 36 250ml jars of raspberry jam after watching your video. We don't eat exactly that much jam, but we plan on gifting most of it to friends and family for Christmas. We use decorative mason jars and tie a ribbon around them with a little tag showing the ingredients: Raspberries and Sugar. Oh and of course the Merry Christmas too.
    We find people are much more appreciative of gift baskets containing a variety of natural simple preserves than a gift card they'll probably never even use. This raspberry jam will be a nice addition. Thank you!

    My nan sent me out a few bottles of her fresh raspberry jam last week, pop went in the woods and got the berries and nan did up a small batch. There's nothing in the world that tastes so good as something made with love like that!

    Beautiful videos, my mom taught me to add a tablespoon of butter to reduce amount of foam developing on surface. It works beautifully

    Great Job Bonita, I hear of people complaining about their jam looking to washed out or not really red but I think how you made it happen was to add enough sugar and let it boil long enough to condense

This is a lovely jam and letting it slowly condense stirring occasionally will remove the liquid and make a delicious jam. I know we all don't want to much sugar but sugar is the key to a lovely jam.     I’m drooling - raspberries, sooo good made into a sauce to put over cheesecake or ANYTHING else. My favourite jam on homemade breads, your recipe! How wonderful to have a sister that has plenty of raspberries. Are there lots of farmlands - veggies - blueberries etc. close to your place? Seems like you live in paradise! What a treat to always have access to FRESH seafood! Don’t know how you get the time to do all that you do - and, ALWAYS with a clean & tidy kitchen - I’ll bet your house is spotless. (I’ve really got to get a lot more busy - lol).

      Haha you are so sweet and thank you for the lovely message and for stopping by, we work 24/7 and even in our sleep we are working. My sisters garden is facing the Ocean and on the side of her house is all raspberry plants and goose berries, then on the back of her house in the woods is blueberries, she is so lucky. I live in the woods but only 5 minutes from the Ocean, I'm sure there is lots of berries in the back but we have to many trees to get through. I like a clean kitchen when I'm working because you feel good, but its just me a Raymond so its not much mess to clean up.     Great video, thank you l will be trying this one for sure. I noticed that you put regular lids on then boiled them? Do those ones have a shelf life or do they go straight in the fridge?

      Those got a shelf life and fridge of course, the tops got a bubble on them and when you boil them that bubble goes down and it seals. But most of the time I use them for straight to the fridge for short shelf life. Enjoy our recipe and the regular mason jars work best if you are not sure on them sealing. :) Bonita

    Bonita, how long will a bottle of jam keep if stored

      Hi Erica: Thank you for your message and for stopping by, if you have the mason jar seal properly the bottles of jam will be good until all jam is eaten. Date the bottles for your own record or if you give one for a gift. When sealed keep a cool storage away for heat or sun, and when opened keep in the fridge until eaten.     Hi, I made the raspberry jam yesterday following your instructions but my jam as become so stiff like candy. what did i do wrong. Please is there any way it can be corrected or I have to throw it away

      Hi Rose Osei, Thank you for your message and for stopping by, sound like your boiled it to long and it turned to jell. I'm not sure if you did the jam check with a cold plate, jam can go three ways, under cooked and not jell, over cook and jell to much, and cook prefect and be delicious. I'm so sorry yours was over cooked. Unfortunately there is no fixing this one but maybe you can use it in a recipe , like tea buns or squares. Please try it again, Bonita

      Hi Soonah: Thank you for your message and for stopping by, if your jars are sealed you can keep them at room temperature or colder room storage until they are all gone. But if they are not sealed you must keep them in the fridge until gone.       Yes you can and it would be lovely, I have a recipe here for plumboys also known as black berries, this is a cream cheese mini tarts.....so tasty. www.bonitaskitchen.com/recipe/newfoundland-plumboy-berries-cream-cheese-mini-pies/ But yes the raspberry jam recipe would work great for blackberries. :) Enjoy Bonita

    How do you make jam out of frozen mixed black raspberry, red raspberries and wild raspberries

      Thank you for your message and for stopping by. Just use the same recipe as this one and add all of them in together and follow the recipe,. You can start with them frozen berries in the saucepan. Maybe you will have to let them boil a little longer to remove some liquid. Enjoy Bonita
