The thing that allowed me to let go of cheese was burmese tofu. I tried it on a whim this past December, and it was soooooo creamy and smooth and mild, it really hit all of my cheese notes in just the right way. I bought mine from Sprouts but it's so easy and cheap to make at home as well, it instantly sealed the deal for me. I'm already familiar with miyoko's recipes and tofu cheese, but a quick, easy and inexpensive cheese alternative was the key.

What's the recipe you use to make it?
@@nishiki393 My apologies, I actually purchased chickpea tofu from Kroger! And I've been following Simnett Nutrition's recipe for his burmese tofu, it's delicious.

Loving this interview and the book seems very interesting. We all want that ‘cheesy’ replacement. I have to ask though, is there oil in most of the recipes please?
No! There are a lot of recipes that are oil free!! You can also omit oil in recipes and I tell you how :)

I love making cashew cream sauces, but isn't it loaded with saturated fat? My husband had a 99% blockage followed by a stent, and we generally try to avoid nuts, as per Dr. Esselstyn's advice. Do I need to avoid it completely? Thank you for the program today.
there are plenty of recipes in the cookbook that use tofu or veggies as a base and are very very low fat!

Oh no…I was hoping it was all oil free.
So…some recipes have a little bit of oil and others don’t…what about coconut products?
Are they left out of the recipes?
I’m WFPB SOS-free, and don’t eat coconut products because of the saturated fat.
Will there be many recipes I can make?
Yes! I wrote the book with *everyone* in mind. There is a little ledger on the bottom that says "oil free" or "oil free optional" for the recipes that are made without oil! This is the same for food allergies like nuts, seeds, grains and gluten.
Vigan cheese has OIL?
Only the ones that melt!

Cashew is a seed that is toxic before processing.
Pistachios and Almonds are drupes.
Peanuts are a legume.
I can taste mold on walnuts sometimes. Peanuts can also be moldy. Mold produces aflatoxin that remains after roasting, even roasting. I read that these molds and aflatoxin can be found on nuts, seeds, legumes and grains.
I'm starting down the probiotic road and was curious about your thoughts on Milk Keifer. I already make water keifer and it's pretty simple.
Home made milk keifer has way more probiotics than store bought milk keifer. I'm curious what are your thoughts? I'm also thinking about plant milk keifer and using milk keifer grains with the plant milk. The water keifer is recharged in sugar water and milk keifer grains are recharged by mammal milk. The milk grains are washed off b4 using in plant milk.. What do you think?
