On the new carriages: Not sure if I like the mid carriage doors and no more overhead luggage racks. The seats look comfy though. I hope they didn’t discard the toilets.

The lack of overhead luggage racks has been one of the main complaints I've seen from the regulars, an issue made more prominent by the lack of space under the seats and tables now (which are smaller). Further to that I don't know about you but I'm not comfortable with the thought of having to put any bags I can't fit under my seat onto one of the luggage racks at one end of the carriage the next time I travel on the train (I usually take a day trip on it 2-4 times a year). Someone could easily accidentally or purposefully take it/them without me knowing.
As for the mid carriage doors, yeahhh lets see how drafty the carriages become on windy days...
On the seats. From seeing photos my first impression was compared to the seats in the old carriages the new ones looked uncomfortable, and from comments I've since seen from the majority of the regulars it seems that first impression was pretty much bang on. To quote one of said regulars "the seats were apparently designed for Hobbits. The tables are too narrow for 2 people opposite to use laptops and narrower tables mean even less legroom than previously. While seat cushion is comfortable, Lumbar support is too low and seatback also. Designers did not consider ergonomics and size of average kiwi."
Due to it being a legal requirement for vehicles (trains, planes, buses) that will be travelling for over an hour to have an onboard toilet/s or (in the case of buses) make regular toilet stops the Capital Connection has to have toilets, so yes it does. Have a read of my discription, I've made mention of what features can be found in the three different types of carriages (SRG, SRC, SR), e.g. how many seats there are, whether it has a toilet, where the accesible area and toilet can be found, etc. I got most of that information from here:- www.tehuiatrain.co.nz/assets/Te-Huia/Te-Huia-Carriage-Maps.pdf?fbclid=IwAR3EG9c7LtaI-4w7T-pBoB8GqtOnBOvdDMklhxYIHeCu2MBiMIBQ6Uyf9aw
While the diagrams are not of the Capital Connection, I'll be very surprised if the general layout of each carriage is any different.
