Another really simple and faster way you can change all the colors at once for something with different strokes and fills is to go to edit/edit colors/recolor art work then you just double click on then color you want to change then select the color you want it to change to then save

Can you talk more about working on RGB vs CMYK? As far as I know, RGB is for web and CMYK is for prints. But what if you need both? I'm new to this and still figuring out my workflow.

you dont need the different colored shape to measure their spacing, you can just select both of the shapes and with the smart guides you can put them spaced out evenly
