With bone in, and if you wanna have it well done, yeah. But bone out, and cooked to a bit pinkish, 35 is perfect. Unless you're confusing leg and shoulder. Whole shoulder, bone in, takes about 4 hours

Nooo!! How can you have leg of lamb that isn't on the bone?! :O Cooking with the bone gives so much flavour and slow roasting it throughout the day is the way to go. Tending to it every few hours to baste it in the juices/marinade. Awww mannn i miss being home. Though i do love Ramsay's stuff in general.
It's a personal preference thing, roasting whole can be very good but it also takes much longer and it's not practical if you want it rare or to serve it in restaurants in equal slices. Personally I love goat leg... -drool-
