Made this. Turned out delicious. I have also added some fish sauce that could add some umami for the depth in flavor. However, could you tell for how long did you cook the sauce to turn brown? Mine still looks like its pale brownish cream color.
Yes, AP flour can be used as a thickener. Into a pot, equal parts flour and fat (butter, olive oil, etc) cook it down for a few mins 4-5 mins, then add your choice of stock/ water, then you can add the rest of the cooked mushrooms+ aromatics into that pot.
It’s OK. I guess you have to be a vegan to really love it. Fresh creme, no nutmeg, and cloves, fresh crushed garlic, some pepper, imo, tastes x10 better. Pasta looks amazing though.
I’d be careful about snipping full thyme stems onto the food. The stems are toothsome, and difficult to chew. It would be much better/safer to just peel the leaves off the stems.

Or you can simply add less milk so it thickens and absorbed easily and wont be watery. Or use plant based cream if vegan
