One of our new favorite camp meals is a box of mac and cheese... add in a can of drained kidney beans and some leftover meat (like chopped pot roast or shredded chicken). Hearty meal after a great day of hiking. We are also big fans of fajitas almost every weekend camping trip... just prep all the meat and veggies at home and then stir fry at campsite in one pan.
our season is coming to a near end in southern ontario, sigh...but a girl loves a good charcuterie board ALL seasons. with a glass of wine. my best way to eat 👌

I'm looking to start car camping this summer. I would go as a kid but as I got older I never seemed to find the time. I'm really enjoying your channel. The food ideas are especially helpful.
I have a favorite place in a remote part of northern PA that I like to camp. People used to wonder what in the world were the crazy sounds before dark and during the night. It was the same birds with their young'uns! I have been making sourdough Einkorn bread in a Dutch oven, now you have me thinking of ways to make things over the fire! We make "mountain pies" here in PA, in a cast iron handheld cooker over the coals of the fire.
For the "mountain pies" do you use a pie iron? I just bought one, but I haven't had a chance to cook with it yet. The birds were so cool to watch. I watched one of them bring a fish to the young ones! It was so cool! I've been making sourdough bread at home, but I would love to try and bake it while camping someday. Thanks for watching 😁
@@amanda.outside yes it's the young ones that make all the noise, because they are hungry I suppose. Kinda freaky sounding at night if you don't know what it is. Yes mt pie irons! When I camp alone that is the best option. Fruit pies are good, but usually it is either pizza sauce or salsa with pepperoni or salami and cheese, a nice mini personal pizza. I have to use einkorn or sprouted breads.

Breakfast looks yummy! Adding sultanas will take it next level yum 😋. I love Mac n cheese out in the bush, so yummy, filling comfort food after lots of hiking
All looks delicious! Digging that you used precooked rice. Never thought of that. What do you do for refrigeration when camping? I can see yogurt and berries for a day or two, but I’m not sure how it would do on the third or after day. And the last time I went camping, all was delicious but I ended up eating a bit more salt than normal and I found I retained so much more water from it. Took a few days and lots of drinking water to recover. 💧

Wow, that stir fry and crisp look amazing....yum! Does the parchment help keep the crisp from burning? I made a crisp in my dutch oven but it burned....I think it was b/c we had it too hot though.
I just use the parchment paper so cleanup is nice and easy! When I cook the crisp, I have more heat on the lid of the dutch oven than I do on the bottom. Hope this helps!

That is my kind of lunch. Cheese and cracker, celery and peanut butter (I love to add this), and fruit. My own sort of lunchable. I cheat more than u do for dinner. I buy a streamable bag of California vegs, small cup minute rice, some sort of sauce I pick up at Chinese restaurant, and a pouch of favored tuna or chicken. Warm it up and done. Urs is much better tasting though..
For the crisp recipe can the fruit be interchangeable? More specifically, would cooking time be different if it wasn't peach/blackberry? I'd love to make this but with honeycrisp apples and something.
I do think that this would work with most fruit. I would slice the apples about 1/8 -1/4 inch thick so they cook well enough. I'm working on a dutch oven apple crisp recipe coming soon for the Fall! 🤗
