    That looked really awesome. Eggplant Parm. Goes awesome with Italian bread and a nice salad. And I'll wash it down with a glass of ice cold while milk. I love drinking milk with any type of Italian dishes that use awesome Italian tomatoe sauce

    My grandmother used to peel slice then put the slices in a colander with salt and let them rest. She said it got rid of the bitterness. Then she floured, egged and bread crumbed the slices and fried.

      Our grandmother did that as well, but we never did. We used to bread full cases at the restaurant with no issues.

    They have no idea what 4C or Polly-O is out here in Vegas. Was in Costco today and they didnt have breadcrumbs. Never would that happen in Brooklyn. Great video!

    Papa P this looks excellent! I cut the rounds like you do. The only problem I have with making these is I eat half the fried eggplant before I even get to the parm part! Looks great as always!

    LOVE this recipe, thanks for sharing. An all time favorite! To Kick it up a notch I like to alternate layers with chicken... Chicken&Eggplant Parmesan.... SO good!!!!!

    My daughter and I love eggplant parm. Other recipes soak the eggplant in water or salt it to get the moisture out. Looks like that is not necessary? Right?

      That’s correct. Not necessary at all. We’ve made tons of eggplant during our restaurant years without any problems.

    My mom made it the same way but I don’t think she coated them in flour before she put them in the egg and breadcrumbs. Does the flour make a difference? It’s my all time favorite dish and I’ve made it dozens of times but never with the flour. I would like to try that though.

      The flower helps the egg mixture cling to the eggplant therefore, you get a better layer of breadcrumb on the eggplant.

    How di you keep the eggplant firm? As you know its like a sponge. It absorbs any liquid and oil. Mine always comes out mushy.🙄 Do you chill it or sear it?

      Just get the oil to about 375° and fry for about two minutes on each side.

    Eggplant is high in acid content. Salting cut up eggplant draws all the acid out. With all the acid fluid drained out when u fry your eggplant slices it makes for a crispier finished eggplant parm

    salt the sliced eggplant and let it sit for 15min to remove the excess moisture(vegetation water)

      Hi Sharon, if you find a lot of seeds inside the eggplant it is sometimes better. Try to find firm thin eggplants.
