My Nona, like you, was from Napoli and breaded. My other Nona was from Calabria and she breaded, as did my Mom and all my aunts. When you say "real Italians" that takes in a lot of territory. Some real Italians, in some dishes (horrors!) leave garlic in, especially in a 6 hour Sunday Sauce. I like to infuse so the garlic doesn't burn, but that's just me. Love your show, it's just that a lot of folk these days say stuff about "real Italians" when "my Nona " or "real Italian family" would be more true. We love you and watch all the time! Merry Christmas!!!
when i was 21 years old i spent a summer at cornell university and the first dish i ever made was eggplant parm from their cooking school's library. i have made it that way for 47 years and last night i tried your way. what a game changer. thank you for sharing this, laura.
It looks delicious, the flour then egg is like a francese. Never thought to make it this way but deff going to try it! I have a few eggplants from the garden I need to use up
I love how you talk about your grandmother. I can tell how much you loved her like I loved my MawMaw when she was still here. Sharing her love of cooking with me meant the world! Thank you for sharing a piece of your family! ❤️
I have eaten different type of eggplant recipes from multiple Caribbean islands and made the one you have illustrated in you tube. The family and friends enjoyed very much smooth taste not oil and no bread crumbs... thanks to the chef 'laura"!...
My grandmother was half Italian and half Souix Indian but I never really knew her she died when I was two. But my mom said that she was a phenomenal cook. Of course I don't know if anybody was as good of a cook as my mother though.
Yes! That is how my grandmother and mother made eggplant! Never salted and drained, just cut, floured and yes egg and cheese (our family always use Romano) and then fried. Delicious!
🍆 parm is my favorite Italian dish. The olive garden version is good but you haven't lived till you tried it the right way. Bucco de pepo makes a good authentic one like Laura.
I made both your eggplant recipes, and your right... I'll never make it with bread crumbs again. The best tasting eggplant Parm I made in 20 years. Thank You :-)
My mom absolutely loves eggplant parmigiana. Every time I try to order it, I get talked out of it, so I’ve never actually tried it before. Your method looks very delicious. I love to try this with my mom.
Hi Laura! This looks really good I can't wait to make it! I was binge-watching some of your dessert recipes and I made my first homemade cheesecake with homemade whipped cream! It turned out great thanks to you!😀👍💞
Omg Laura, I just made your di casa version. So good! I made enough to eat some, freeze some, and keep some in the fridge as a pizza topping for the end of the week. Thank you for sharing your recipes 💜
Laura, I'll eat however it is made. In Bari we skin and breadcrumb with a few other simple ingredients. Funny how different families from different regions execute. Love your show. Good health to la famiglia.
This turned out really good. I would recommend adding spices made my marinara sauce soooo yummy. I added dried Italian seasoning onion powder smoked paprika extra dried basil.
Hi Laura! You look lovely as always! I don't think that I have ever had Eggplant Parm, but I must say that yours had come out looking fantastic! I would definitely give that a try. Everything that you make always is first rate! Thanks for sharing your recipe. Have a great weekend my lovely friend and stay safe out there! ❤️
I had never tried eggplant like this. I made it and it was so delicious! It didn't even make it to Parmiggiana. I just had it plain our of the pan lol.
My boyfriends nonna is also from Naples and she would NEVER coat eggplant in breadcrumbs for eggplant parm either! She does it exactly how you did it in this video, and its PERFECT every time❤️❤️❤️❤️
I've made it di casa and baked but never without crumbs. I've made zucchini with flour and eggs. Will try it ..looks so good. I make marinara just the way you do but I slice the garlic thin. I like to eat it. So hungry now..love eggplant.
Timing is impeccable on this. It wasn't more than a couple weeks ago that I was planning to make a eggplant parm dish for the holidays and what do you know?... Laura decides to upload a video revisiting the dish.
Great recipe Laura. I made it yesterday and my wife & I loved it. I definitely will be checking more of your recipes out. One question, have you ever made homemade Italian sausage? If you have, that would probably be a great video. Thanks again my new friend.
Hi Laura! I looove eggplant parm, thank you so much. I have a question though... I don't generally do it very often because I find it's so time consuming to fry the eggplant. Have you ever tried baking it?? Do you think it would be any good? Just as a way to make it more practical for everyday meals. Thank you!!
we need to discover away to watch and send what your kitchen smells like as your making all these delicious meals ,my stomach growls after each video ,thanks Laura❤️
That looks delicious never seen it done that way thanks for shareing another great recipe I have a question have you ever made the eggplant with the rice in the middle like layer of eggplant then rice then eggplant again my nonna use to make that all the time I forget what you call it in Italian thanks

I recently heard your life story ... glad you came to the USA ..we love you .... Peace
Where?
@@holly9492 she came from Italy
That looks so delicious
We bake our at the end no matter. Baking it makes the eggplant even more tender and gives it a lasagna-like texture. Both ways, still amazing though.
Hi Laura! I looove eggplant parm, thank you so much. I have a question though... I don't generally do it very often because I find it's so time consuming to fry the eggplant.
