I tried this and it's realllyyyyy delicious and crunchy! 💕 Here's some tips if you're a noob like me tho, 1. Flatten the cabbage properly cause if you don't some of the batter will be undercooked although it's already brown 2. Put the batter layer by layer to avoid the inside undercooked(if you want to put a lot of battter) 3. If you're eating it alone / as side dish, You might want to reduce the amount of batter you're making cause you can make A LOT of cabbages with that amount of batter. I made two plates of baechujeon and there's still some batter left so I store it in the fridge.
Also I made a mistake.. I didn't have broth beforehand so I made it, and I used the BOILING HOT broth to make the batter and OMG it made the batter so thicc I had to add more water. So cool down the broth first cause that'll really change the ingredients measurement.
Yes, my boyfriend is very picky about food, he usually eats a lot of meat but not so many vegetables but he really loves korean food. His intestines never saw so many fiber for only one week of korean food...very healthy
As a teenager to my mid twenties I worked for a Korean own company. I didn't realized how much they influenced me until now. They introduced me to Korean food, snacks and boba. The ajummas would give me a plain sweet potato wrapped in plastic as a snack. Now in my 30's I really miss the food and I am here learning how to cook Korean food. Just made these for lunch today with my homemade Vegetable stock, coconut aminos (heart condition can’t have soy sauce or salt) without pepper flakes. We loved it! He asked for more, I had some batter left but no sauce so I sprinkle soy sauce, sesame oil & seeds on his & mine with CA. Still delicious!! Will be making these more often! Thank you!!
I love how she addresses the possibility of not having any stock or broth on hand. I always do but there are other things I may not have on hand for a given recipe. When that happens, I have a ton of questions regarding what might work in its place and also how that will affect the outcome. Here she addresses multiple substitutes and even lets you know at least one will be less delicious. Lol. That’s great. That’s helpful. One knows what to expect. They also know if they wanna go ahead and try it with whatever they happen have on hand or do they want to wait until they can gather up different ingredients. If you’re a passionate home cook this is much appreciated. If you’re a passionate home cook on a budget it’s even more appreciated!

I’ve made it twice already, and I want to say THANK YOU, MAANGCHI. This one is the best 🖤 and I’ve tried something similar with thinly sliced zucchini - it was really tasty too! Oh, dipping sauce is great, but this one goes super good with a spiced sour cream with herbs. Recommend !
Szabados Réka, super easy! I sliced zucchini thinly lengthwise, salted them up so that excess water comes out, then washed and soaked them (you can skip these steps, but it makes zucchini crispier). I used exact the same batter, dipped slices and fried. Tasty!
Omg we “received” 15-20 lbs of green leaf lettuce (long story) and we didn’t know what to do with it all. So I used this recipe and with the lettuce instead. (Also made geottori, muchim, lettuce wraps, and the rest was blanched for future use) SO TASTY!! It falls apart easily, so it’s not as pretty but was delicious. This morning I made it again but also used thin sliced onion and zucchini, it was halfway between pancake and tempura

Когда оставался кляр, я его доливала сверху на капустные листья. И соус немного другой, т.к. некоторых ингредиентов не было, а уксус просто побоялась. У меня такой: соевый соус, горчица (русская), мёд. И разрезала я на 2 части небольшие листья. Потом сворачивала и макала в соус. ОООО!!!! Не могу понять, за что дизлайки поставлены. Дизлайщики, научитесь готовить!

Random thought, but while Maangchi was just explaining how nice and pretty her cabbage was I just connected the fact that in Avatar: the Last Airbender the Earth Kingdom is based on Chinese and Korean culture, and the biggest running joke through the show is the cabbage vendor always having his cabbage cart destroyed and yelling "My cabbages!" It always seemed just silly and random, but knowing how significant cabbages and fermented variations of cabbages have been to nutrition through the ages in that region of the world, it actually makes sense.
As a gardener who grows cabbages, Korean radish, garlic chives, green onions, garlic, onions, and chiles - mostly for use in kimchi and Korean cooking - I would be distraught if someone destroyed my cabbages. Like seriously upset. I give away extra produce to friends and family all year round, because it makes me happy to feed people. For that hard work to be destroyed would be devastating. I’d be the person shouting, “My cabbages!”
I legit went to the comments section to check if someone has the same thought as me (my head screamed "my cabbages!" when she was talking about the cabbage). I am not disappointed. 😂

this is sooo sooo amazing! Thank you Maangchi for the recipe! I didn't have broth so I used water but put cumin pepper and salt in it, then I served it with chilli youghurt sauce and salmon. Everyone loved it in the family!

The cabbage looks sweet and crunchy (i'm pretty sure it's important to not overcook it or oversoak in oil not to make it soggy). The dip though makes the difference. Soy sauce + vinegar + chili is really good (we also do something like that in the Philippines, especially with street food).

Hi! Well, this video came next so I watched it! Cute cabbage! Never thought about cooking cabbage this way! So, thank you! We don't have that kind of cabbage here but I think I can try this with a sweet cabbage we have. I like eating that cabbage this way. I put water to boil and put the leaves in it for a couple of minutes. Then I remove it so all water evaporates from the leaves. Then I put oil and minced fresh garlic in the pan. I turn the heat and watch so the garlic does not burn. I just want the oil to get the aroma. Then I put the cabbage in the pan. I also sprinkle some dark pepper. In a couple of minutes, it will be ready. I also cut it with scissors sometimes! I am not used to dipping sauces, it's a new thing for me! But I am familiar with soy sauce because I cook some Chinese dishes. I think I will learn a lot from you! Thanks!

I’ve made it twice already, and I want to say THANK YOU, MAANGCHI. This one is the best 🖤 and I’ve tried something similar with thinly sliced zucchini - it was really tasty too! Oh, dipping sauce is great, but this one goes super good with a spiced sour cream with herbs. Recommend !

Szabados Réka, super easy! I sliced zucchini thinly lengthwise, salted them up so that excess water comes out, then washed and soaked them (you can skip these steps, but it makes zucchini crispier). I used exact the same batter, dipped slices and fried. Tasty!
Omg we “received” 15-20 lbs of green leaf lettuce (long story) and we didn’t know what to do with it all. So I used this recipe and with the lettuce instead. (Also made geottori, muchim, lettuce wraps, and the rest was blanched for future use)
SO TASTY!! It falls apart easily, so it’s not as pretty but was delicious. This morning I made it again but also used thin sliced onion and zucchini, it was halfway between pancake and tempura
Сегодня сделала себе. О! Это что-то! Описать какая вкуснятина невозможно! Небольшие изменения у меня были. Вместо овощного бульона у меня был мясной. Когда оставался кляр, я его доливала сверху на капустные листья.
И соус немного другой, т.к. некоторых ингредиентов не было, а уксус просто побоялась. У меня такой: соевый соус, горчица (русская), мёд. И разрезала я на 2 части небольшие листья. Потом сворачивала и макала в соус. ОООО!!!!

Random thought, but while Maangchi was just explaining how nice and pretty her cabbage was I just connected the fact that in Avatar: the Last Airbender the Earth Kingdom is based on Chinese and Korean culture, and the biggest running joke through the show is the cabbage vendor always having his cabbage cart destroyed and yelling "My cabbages!" It always seemed just silly and random, but knowing how significant cabbages and fermented variations of cabbages have been to nutrition through the ages in that region of the world, it actually makes sense.

As a gardener who grows cabbages, Korean radish, garlic chives, green onions, garlic, onions, and chiles - mostly for use in kimchi and Korean cooking - I would be distraught if someone destroyed my cabbages. Like seriously upset. I give away extra produce to friends and family all year round, because it makes me happy to feed people. For that hard work to be destroyed would be devastating. I’d be the person shouting, “My cabbages!”
I legit went to the comments section to check if someone has the same thought as me (my head screamed "my cabbages!" when she was talking about the cabbage). I am not disappointed. 😂

this is sooo sooo amazing! Thank you Maangchi for the recipe! I didn't have broth so I used water but put cumin pepper and salt in it, then I served it with chilli youghurt sauce and salmon. Everyone loved it in the family!

The cabbage looks sweet and crunchy (i'm pretty sure it's important to not overcook it or oversoak in oil not to make it soggy). The dip though makes the difference. Soy sauce + vinegar + chili is really good (we also do something like that in the Philippines, especially with street food).

Hi! Well, this video came next so I watched it! Cute cabbage! Never thought about cooking cabbage this way! So, thank you! We don't have that kind of cabbage here but I think I can try this with a sweet cabbage we have. I like eating that cabbage this way. I put water to boil and put the leaves in it for a couple of minutes. Then I remove it so all water evaporates from the leaves. Then I put oil and minced fresh garlic in the pan. I turn the heat and watch so the garlic does not burn. I just want the oil to get the aroma. Then I put the cabbage in the pan. I also sprinkle some dark pepper. In a couple of minutes, it will be ready. I also cut it with scissors sometimes! I am not used to dipping sauces, it's a new thing for me! But I am familiar with soy sauce because I cook some Chinese dishes. I think I will learn a lot from you! Thanks!
