I kind of do this same thing but I do it in a ziploc bag. I mix all my ingredients in the bag and place it in hot water on the stove and let it steam. It does however take longer and is a possible fire hazard lol.. If you don't mind that, it is delicious lol.

Dash makes so many useful products. I already have four of their products, but I am now curious about egg bites like that. Is the texture much different from one just done in the oven? They looked lighter/fluffier when you cut into it.
