The way these recordings are done is that each source (vocal or instrument) is split three ways. One split goes to the monitor mixer for the performers to hear themselves, one goes to the front of house mixer for the PA system and the third split goes to a multitrack recording system (usually a computer with the same software they would use in the studio). There are then one or two mics pointed at the audience which are typically behind the PA and pointed to the center. Those mics also pick up the environment they are in. In this case an outdoor festival but it could be a room they are in. Once the recording is done all those sources and the crowd mics are mixed as separate tracks the same way a studio recording is mixed. The sound from the crowd can be brought in and out however appropriate.
