Made these Baby Backs with Meat Church Holy VooDoo two Weeks ago and they were Great! Made two racks last weekend one with Meat Church Fajita and one with Bowl of Red Chili seasoning and at 1.5 hours they were over 200F! IT! so sauced in the pan for 15 minutes. They were good not great as they had dried out!!! So, watch them close!!! Air temps and humidity were really close both weekends!! Thanks, Matt, for keeping the cooks going!!! Growing up in thousand oaks California we used to go to local jr college and watch Dallas cowboys practice, around 1964,5 i think. All the huge players from their haday, very laid back got all their autographs, with sweat and blood from practice. Very cool to see them.

Made Babyback Party Ribs this weekend using Honey Hog and Holy Voodoo. Also used Whomp sauce, which is the best for ribs, IMHO. Got to get the new Hickory rub and try it out. They were great and perfect before the game. Roll Tide as well Matt!
Oh my, I just did this yesterday! My cook was 3 racks of baby backs and some beans. The sauce and rub was different and I also used my 24x 48 offset sick burner. My temps are very similar however,the end result was the same. When I do this again, the only thing I would change is to put the bone side facing the heat source.

Made party ribs earlier in the year, and will making some next weekend again. Ace carrying Meat Church has made me stop by more often, and now I'll have to stop by tomorrow to see if they have the Hickory seasoning. My Ace started to carry Meat Mitch as well.
It's been a few years since I noticed Ace carrying Meat Church. I think I have all the seasoning. They also have the Meat Church pellets. My one stop shop for my BBQ needs.

This is a game changer. I don't think that I will ever go back to smoking an intact rack of ribs every again. I just used this method and they were the best ribs I've ever had, bar none.
Matt - the partnership with Ace is amazing. It means that in Cheyenne, WY we can grab Meat Church seasonings. What makes it a big deal? BBQ joints out here are hard to find. If you want good Q, you gotta learn to do it yourself. Having supplies close so I can grab them is huge. I used to have to plan my cooks around a UPS truck showing up at my house. Matt - the partnership with Ace is amazing. It means that in Cheyenne, WY we can grab Meat Church seasonings. What makes it a big deal? BBQ joints out here are hard to find. If you want good Q, you gotta learn to do it yourself. Having supplies close so I can grab them is huge. I used to have to plan my cooks around a UPS truck showing up at my house. Good video! Just made party ribs for the first time on my charcoal grill/kamado at home. Awesome and quick! May I ask what type of smaller Traeger grill you tailgate with? The team we tailgate with doesn't allow charcoal.

Now, on to the video. I like how this recipe could be made for a weekday dinner. Could you remove the membrane if you want or should you keep it on because you are cutting the individual ribs before cooking them?
