  • Our Corn Pudding Casserole With Jiffy Mix is a savory corn pudding that is light, fluffy and creamy, like a corn pudding souffle. Our recipe for corn pudding has 2 eggs, which makes this corn casserole less dense than other recipes. It's a favorite on many dinner tables, and it's not just for Thanksgiving and holidays!
    Corn Pudding Casserole with Jiffy Mix Ingredients
    8 tablespoons butter, melted
    2 eggs
    1/2 teaspoon salt
    1/2 teaspoon ground black pepper
    2 cups corn kernels (frozen, fresh or 1 15 oz can - if using canned then drain first)
    1 15 oz can cream corn
    1 cup sour cream
    1 package Jiffy Corn Muffin Mix (see note below for substitute info)
    Corn Pudding Casserole with Jiffy Mix Directions
    Start preheating the oven to 350 degrees. Then melt 8 tablespoons of butter, and set aside to cool.
    In a large mixing bowl, crack two eggs and whisk. Add 1/2 teaspoon kosher salt and 1/2 teaspoon ground black pepper. Next, add the 8 tablespoons of melted butter.
    Add two cups of corn, use whatever you may have on hand. I'm using 2 cups of frozen corn, you can use fresh or a 15 oz can of corn. If using canned corn, drain the liquid before adding to the mixture.
    Pour in one 15 oz can of cream corn. Add one cup of sour cream, which will add lots of flavor and keep our corn pudding moist.
    Add one package of Jiffy Muffin Mix. I sometimes have a hard time finding this in our local store, and have sometimes used the substitute recipe noted below. Mix everything together and pour into a buttered 9x9 sized casserole dish.
    Bake in the 350 degree oven for about 45 minutes. The casserole will have a bit of a jiggle in the center, will be puffed up and turn golden brown on top.
    To feed a larger group, or have leftovers, double the recipe and use a 9x13 dish.
    Personalize this dish for your family with jalapeños, grated cheese or top with fresh herbs for some color.
    How To Make Corn Pudding Casserole If You Don't Have Jiffy Mix
    Use the following recipe to make corn pudding, but don't have Jiffy Corn Muffin Mix on hand. Follow the directions above for making the corn pudding casserole, adding the below ingredients directly into the mixing bowl.
    Substitute for Jiffy Muffin Mix
    1/2 cup + 1/2 tablespoon flour
    1/2 cup yellow cornmeal
    2 tablespoons white sugar
    1/2 teaspoon kosher salt
    2 tablespoons extra virgin olive oil or avocado oil
    Whisk together the dry ingredients, then slowly whisk in the oil. Continue mixing until the mixture is smooth with no lumps. Use in the Corn Pudding Casserole recipe to replace the Jiffy Mix.
