Hot Water Crust Pastry Recipe 300g plain or all purpose flour 130ml water 70g/2 1/2oz lard 70g/2 1/2oz unsalted butter 5g salt Pour the water into a small pan and simmer. Add the salt to the flour in a large bowl. Place the lard and butter into the pan of simmering water and stir til fully melted. Make a well in the flour and pour the water into the well. Using the end of a wooden spoon, bring the flour together to form a rough dough, scrape the sides with a dough cutter, and pop the roughly formed dough onto a floured surface. Avoid overhandling at this point. Gently pat, turn and shape the dough into a rough ball shape, it will be warm and pliable to touch. Wrap in clingfilm and pop in fridge for a minimum of 2 hours or overnight if using next day. It can be frozen for future use as well. Save off cuts and pop in freezer, if you make a few times, you will save enough for using in the future. To make for quiche or meat pies, take out of the fridge after minimum 2 hours and leave at room temperature for 30mins to an hour. Fold over and squeeze to make it pliable as will be stiff and likely to crack if you try and roll it out straight from the fridge.

It's my favourite Lynne, so easy and I never made pastry before. I should have a go at normal shortcrust pastry as well. Puff too tricky, so will always buy that. Hot water crust pastry is generally more robust than normal shortcrust, it's usually used for hand raised pies like pork pie (or any filling you fancy) pastry doesn't need support!

That looks so simple I could have a go at that, that you Kerry and nice to see you have a new washing machine in the kitchen, I have just bought myself a fridge-freezer for £199 then deliver and take away the old one £249 all in get it delivered on Thursday, looking forward to that my old one is just about keeping things frozen.
Big fan of this pastry. I saw people on his video talking about they wish it was more tender or flaky. It's not supposed to be. It's a workhorse pastry. Sure you're not going to win any awards if he use it for a pastry competition. But it's delicious and it holds together well. Perfect for meat pies and such. Big bonus points for the fact that it's one of the easiest pastries I've ever made in my life.

I couldn't make pastry, it was always rubbish until I did it his way. I now have a freezer tray full of assorted pies, and they are delish. It cooks well in an air fryer at 150 for about 45 mins on Bake setting (for ninja). Mine are perfect every time with this pastry. Not tried a quiche though so looking forward to your part 2 :)

The cheaper the ingredients the cheaper the end product. I have loads of flour I paid only 5p per Kg for so anything I make using flour costs more for the other ingredients than the actual flour. The hot water pastry would probably cost me under 38p to make. Have you ever thought about making potato pastry? It's a WW2 method when things were rationed but not potato's.

I think you could, although it may make the pastry extra rich (hmm sounds nice!) Veg oils, olive oil or coconut oil would work too😀👍💕

You could substitute lard for a vegetarian margarine or just increase the butter to encompass the lard quantity 😀👍
