How to make Ube Bread/Pan de Ube

    INGREDIENTS:
    1 pouch or 2 1/4 tsp rapid rise yeast
    1/4 cup lukewarm water
    4 1/2 cups all purpose flour or more
    1 egg, room temperature, beaten
    1 1/4 cups evaporated milk
    4 tbsp unsalted butter, softened
    3 tbsp sugar
    1 tsp salt
    extra flour for kneading​​​ ​
    Ube Halaya/ Purple Yam Jam - for filling
    egg wash (1 beaten egg+1 tbsp water) for brushing
    How to bake using a Mixer / Kneader:
    Dissolve yeast in warm water (110-130°F). Stir to dissolve and let stand for 10 minutes. Set aside. Click here for procedure & tips for a successful yeast. www.pinoycooki...
    While waiting for yeast to bubble, place milk, butter, sugar, and salt into a microwave-safe bowl/cup or saucepan.
    Microwave for around 1 minute or heat over low heat on the stove. (Mixture should NOT be over 115°F or feels hot to the touch.
    In a mixing bowl, combine 3 cups flour, egg and yeast mixture. Mix on level 2 with dough hook to combine.
    Add the milk mixture.
    Continuing on speed 2, gently add another 1 cup of flour then add 1 tbsp at a time (if needed.) Continue mixing until a dough is formed and clean sides of bowl. (The dough should be soft and still slightly sticky.)​​
    Form the dough into a ball and transfer the dough to a lightly oiled bowl, cover with a damp cloth and let it rise in a warm place for at least an hour.​​
    After rising, punch down the dough and transfer onto a lightly floured surface.
    Use a dough slicer to divide the dough into 2 equal parts.
    Using a rolling pin, roll the 1 part of dough to a rectangle.
    Spread ube jam evenly.
    Roll up the dough to form a log. Slice the dough into equal parts.
    I shaped mine by pressing a stick (I used chopstick) in the middle of a sliced dough to get a nice deep mark in the middle.
    Repeat the procedure with the other dough.
    Place all shaped dough in a baking pan lined with parchment paper.
    Cover the tray or pan with a damp cloth and let it rise for 30 minutes.
    Preheat oven to 350 degrees F.
    ​Brush with egg wash.
    Bake for 13-15 minutes.​
    Remove from oven.
    Serve and enjoy!
    *** Oven temp varies. I suggest to bake it the first time at 325 deg F and see how it goes or use an oven thermometer to make sure.
    *** Always check before the set time. Set time at 12
    minutes and check if top is golden brown.
    Makes about 15-18 pieces.

    I made this multiple times now it comes out so good just make sure all the liquid temp is not too hot not to cold… i didnt even need to add more apf! Thank you for this recipe!

      I think you can do the first rising, punch it down to release air pockets, refrigerate then you can shape it the next day for 2nd rising.

      I never use window pane pag gumagawa ng bread. As long as they come together, hindi na sticky at hindi heavy as in over sa flour same lang yun.

      It still turned out good! My family loved it. Im making it for the 3rd time today. For some reason the second time i did it i got the same consistency as you... but today its not as sticky i dnt get it :)

      I haven't tried but I have read that you let it rise, punch down to release air packets then refrigerate. You cannot leave overnight to rise or else it will taste yeast.
