I've been a chef for 30yrs coleslaw can be amazing if done right, but I found that using 3to1 salad cream and mayo is the best dressing, perfect sweet tang from the salad cream and then the creamy texture from the mayo, it makes the dressing lighter and not heavy whichc100% mayo will do, then I blanch the onion for 30sec then. Straight into iced water this takes away the raw onion taste but keeps the crunch. If you shread the red cabbage then place into iced water it stops the cabbage from bleeding, not only that it stops the water from leaking which you see the day after

Put a Damp tea towel under the chopping board to stop it slipping around.

That would be an actual recipe rather than chopping some veg with a machine and mixing it quite a lot with a spoon

Nah mine is the best ever , with rosemary infused olive oil , white pepper , bit of American mustard for the vinegar taste 👌

Bit of dijon, white wine vinegar, dill and coriander. Nom.
