I'm absolutely in love with his stuffed peppers & linguine & clam sauce, & his mushroom barley soup just filled my heart with memories; it's exactly the way my Momma made it. She passed away without leaving anyone the recipe so I hadn't eaten it in 24 years. I cried & smiled while scoffing down the whole pot of soup.
be cuz there carot involved .... you can put a 3rd cup of carrot juice in a tomato soup cambells and you wont tast it .... also carrot + brocoli + teriyaki iz amazing dont add onion to that

I have spent several years trying the coleslaw all around my area--grocery delis, chicken joints, etc. Everything creamy.....with cabbage that fights back. Nothing like the coleslaw I knew in my youth. When I saw this and the brine step I knew the quest was over. And I could make it myself. About to consume the last of my first batch.....many thanks. As an 80s kid, cole slaw was just EVERYWHERE! I could always take it or leave it but I’m taking notes on this video cuz my wife simply loves the stuff. I’ll cook anything for her. I love the variety of dishes/side dishes taught on this channel! I love that it’s not all entrées.

This saves a step and the cabbage doesn't fall apart when you get to the end (I do this with onions as well) I learned this from years of prep work 3) I'm a southern boy and Dukes is definitely my favorite but every cook has to be considerate of regional authenticity - Hellman's is the standard mayo north of Baltimore - then proceed accordingly - every recipe needs a baseline to operate from - I was taught to learn the original and riff as you like - your instructions are precise and simple to follow LOVE YOUR CHANNEL and everything you do to promote this style of regional cooking - THANK YOU!

Midwestern Deli cucumber salad is sliced cucumbers, sliced red onion, diced tomatoes, and bottled Hidden Valley Ranch Dressing, the original. The amount will depend on how many cucumbers you use. One big bottle does a lot.:)
I grew up on LI, on into my 20’s but moved from there to western Ohio a long time ago, and have sorely missed NY deli food, pizza, bakeries and Carvel. Can’t wait to try this recipe!
We’ve made this Cole slaw twice now and it’s the best! It keeps several days and stays crisp and creamy much longer than any other recipe we’ve ever used.
Saving the juice is a great tip…. So many things you can do with it…. and please (PLEASE!!!) do the cucumber salad recipe!! And thanks for being sure to tell all those watching, to use the “guard/handle” when using a mandolin…. Other TH-cam cooks make me cringe when they use a mandolin bare handed…. Accident waiting to happen….

I like some diced green pepper in my coleslaw. It gives color contrast for look appeal and adds flavor. Most coleslaw that I have tried have way too much mayo regardless of the brand. (edit) You should also add Chinese Takeout to great food institutions of the New York area. Trying to get half-decent Chinese food in the South is as difficult as good pizza or bagels.
I know what you mean about Chinese food. I lived in South Florida & the Chinese food there was as good as in NYC but here in the Pacific Northwest- egad. I've taken to making my own Chinese food. I've yet to be bold enough to make egg rolls or wontons but I can make some mean entrees. Check TH-cam & you'll find some great Asian recipes.

Finally made this coleslaw & OMG! I’m ditching all other recipes, because this is IT. I’ve never been to NY, so I didn’t know what to compare it to. I just know it’s delicious.
even though the brine isn't my personal preference, i can appreciate the intention to show people how to get the authentic deli taste. i'm sure there's a lot of people who will get major nostalgia when it tastes just so. for my husband it's taylor ham, egg and cheese on a bagel. sadly you can't get anything that tastes even similar to taylor ham in europe. but i did learn how to make bagels that give him the back at home feels, we've never found any store bought or from a bakery in europe that will pass the taste test.

Best cole slaw I have ever made! It's all in your technique. Who knew it would make such a difference to brine the shredded cabbage. I did the two-day brining and just mixed it up with the Best Foods/Hellman's mayo this morning so we will have it for our July 4th feast. I live in CA now and this tastes like the real NY deli cole slaw of my dreams!
NY deli salads are the BEST! I miss them! Grew up in Long Island and they are the best!! But I always remember having carrots in coleslaw from Long Island. It makes it.

Oh my god! This is hands down THE best coleslaw we have ever tasted. You cannot buy this stuff in the UK, it just doesnt exist. its incredible and we have nearly eaten the entire thing in 1 sitting!
My mother always gave me the goyumbeck of the cabbage. The inner part of the stem. So sweet and crunchy. Don’t really know that that word existed but I’m Polish and as I was the youngest sitting there watching my mother make coleslaw I got it.
I live in Tennessee but grew up in North Jersey. Although I'm pretty good around the kitchen on my own I gotta say thanks for all the tips and tricks you give us to give us that taste of home. Loved this recipe and definitely agree on the trio of delis, bagel shops, and pizza joints. But you could add diners to the list and make it an awesome food foursome.
I never thought of marinating the slaw overnight and THEN adding the mayo. But I'm definitely going to try that. I'm a northern NJ gal, living in the south. Duke's is practically a religion down here. I've decided to be Switzerland; I use the Chosen Foods avocado oil maynnaise.

Best Foods is the same as Hellman’s!! BF is west coast, Helman’s is east coast.

The recipes I use are from Asian cooks.
It’s gotta be Dukes if it’s down south. Just saying, better taste, better thickness, “cleaner”, etc. Plus, barely any vinegar.

Finally made this coleslaw & OMG! I’m ditching all other recipes, because this is IT. I’ve never been to NY, so I didn’t know what to compare it to. I just know it’s delicious.
I believe the carrot not only gives it a pop of color but I think it makes it taste better. Yes l loved to watch the cucumber salad.

even though the brine isn't my personal preference, i can appreciate the intention to show people how to get the authentic deli taste. i'm sure there's a lot of people who will get major nostalgia when it tastes just so. for my husband it's taylor ham, egg and cheese on a bagel. sadly you can't get anything that tastes even similar to taylor ham in europe. but i did learn how to make bagels that give him the back at home feels, we've never found any store bought or from a bakery in europe that will pass the taste test.
Plus they are fun to make!
We left the northeast 30 years ago. It's been a good life, but I've always missed the delis!

@@barbaramsnyder8659 I’m from the Philly suburbs and a Pork Roll sandwich for breakfast on the boardwalk after a night at the clubs brings back great memories from long ago. I’ll still get it once in a while at my local supermarket, but it’s just not quite the same.
Hands down the best coleslaw recipe on YT! It makes so much sense to brine that cabbage to get rid of the extra water in the cabbage!

Best cole slaw I have ever made! It's all in your technique. Who knew it would make such a difference to brine the shredded cabbage. I did the two-day brining and just mixed it up with the Best Foods/Hellman's mayo this morning so we will have it for our July 4th feast. I live in CA now and this tastes like the real NY deli cole slaw of my dreams!

NY deli salads are the BEST! I miss them! Grew up in Long Island and they are the best!! But I always remember having carrots in coleslaw from Long Island. It makes it.

I worked in a deli in fairfield county CT in the late 90s, this was very similar to our recipe, which our owner bought from the previous owner.
My shift was friday mornings, I would cut the cabbages on the slicer

My mother always gave me the goyumbeck of the cabbage. The inner part of the stem. So sweet and crunchy.

I live in Tennessee but grew up in North Jersey. Although I'm pretty good around the kitchen on my own I gotta say thanks for all the tips and tricks you give us to give us that taste of home. Loved this recipe and definitely agree on the trio of delis, bagel shops, and pizza joints. But you could add diners to the list and make it an awesome food foursome.
I never thought of marinating the slaw overnight and THEN adding the mayo. But I'm definitely going to try that.
