    The USDA food standards are crap anyway. High fat is actually one of the best macros you can increase. Sugar should be decreased. Anytime you stand for anything, you will make enemies. If you have no enemies at all (not saying you should seek them out) it means you didn't stand for much in life. He was right about school lunches.

      The food pyramid is completely backwards, we need more fat vs more sugar and carbs. I've seen the new proper science behind the ass backwards out dated food pyramid, sad how we teach or try to scare people into extremely unhealthy habits. Not to mention all the preservatives, additives, pesticides, etc... that we allow pumped into or sprayed onto our foods in the US. I lived in France for 4 years and OMG, they eat like 5-6 course meals, a drink, an appetizer, a meal, varied cheeses, a cafe and desert and lots of fresh daily made bread from the boulangerie. Yet in the 4 years there I saw less obese people than a normal American Walmart visit. Its definitely all the BS we allow to be put in our foods before harvest and all the preservatives added to allow long shelf lives. Not to mention even in elementary, the school board comes together with a qualified nutritionist and the schools chefs(trained actual chefs vs our untrained lunch ladies), and they map out 1 months of food in advance and then cook a healthy multiple course meal everyday for the children vs the slop we allow the kids to binge on in the US. Its sad but we are doing it to ourselves, we need to learn from our brothers and sisters who are doing things right, and not just for food. America needs to get off its high horse and realize we've made alot of wrong turns since the 1950s.

    I must point out the idiocy of criticizing someone for adding large amounts of sugar into dishes and baked items that are clearly rare, celebratory or the like. It is perfectly fine to make a decadent meal once in a while or a ridiculous cake. No one is going after you for your twice a month baked deliciousness.
    It is the consistent everyday part of the diet which is the problem.
    Just as I say about coke, if you need diet coke you are drinking it too often. Make it a treat and enjoy it.

You may not like Gordon Ramsey, but he did get one thing right, and that was an accurate and surgical assessment of Oliver as a person, and chef.       Gordon Ramsay has a temper, but he is generally respectful of other cultures/cuisines, and he doesn't pretend to be an authority on things he doesn't know. I think the way the American Kitchen Nightmare runs is a bit unethical sometimes, but based on how different the UK version is, it's probably the production team's fault and not Gordon Ramsay's.

    So many of his restaurants and businesses have closed down due to his poor image driving aware clientele. He's laid off literally thousands of employees, with no warnings, because of it. Heck, earlier this year, he made a bad business investment that led to him closing down several of his restaurants across do UK. Instead of using the money that he recouped to give him some employees a severance package, he decided to build an expansion onto his already outrageously large mansion. Because his family "needed it." He's just another hypocritical rich sellout, who spends all of his time talking down to the "little people", while he cozies up to big business.

He's admitting to pushing a model that he knew wasn't working, but tried to fix it by adding a theme to the the newer restaurants. He also haphazardly opened in locations without taking the crowd into consideration. He was too hard headed to listen and tried to throw money into the buisness to alleviate the issue, against the advice of all of his investors.

      @@waraidako Because the investors I'm referring to were brought on specially to save his restaurants. He borrowed millions of pounds with the promise that he'd take the advice of the financial planners and revitalize his brand. Instead, he doubled down on what he was already doing until it was too late. The same investors are also now suing him for misappropriation of funds and violating their agreement because they believe their money went into that previously mentioned house. And again hundreds got laid off without warning in the last closings. Many of whom have started separate class action lawsuits for the different franchises that he owned. People keep crying for this man like he's some kind of victim. They also love to send him by saying that he's a cook and for some reason keep ignoring the fact that he owns several restaurant chains and brands that bear his name. If he just wants to be a cook with endorsement deals, then he should step back in the kitchen and let someone competent run the business. And stop getting involved in controversial topics and practice that a cook/restaurateur has no business being involved with.

    With regards to Huntington, WV, I don't think he created enemies. They may have not liked the menu he implemented, but at least the school district became more aware of the nutrition of the food they serve to the students.

    All creations have roots in tradition, i respected him for his contributions to promote healthier diet for students, as well as easy cook receipes for dummies, but yet i seriously he need to review many of his receipes, dont just create something because you want to create something, people dont put water chilli jam, tofu into fried rice with good reason, its not culture stuff but logic.

      I agree. A lot of his recipes are a bit too much but his recipes also had good ideas that a creative cook can adapt and change and still have some of his ideas. His food political views made sense overall despite flaws.

    Didn’t know about his comments about breastfeeding! I had to stop after 4 months as,not only were I losing too much weight,but when my baby started losing weight our Dr insisted we go on formula milk!

    It's tough as hell to make a living running a restaurant, even harder if you have several. It's tougher yet getting a profit from cookbooks, one of the most over-flooded areas in publishing. But the hardest gig of all is celebrity chef, where they come and go fast. His early success ("the Naked Chef", smirk, smirk) was based on his uh, personal appeal, which really hasn't aged all that well. Unfortunately, while cleaning up school lunches is a noble cause, his approach to it reeked of opportunism.

      I know this is old but I also wanted to point out in some cases, he came off as someone that didn't know better. Basically narcissistic, ignorant and unapologetic that funnels down to being disrespectful a main part of why he was so disliked. At least from what his public image was shown here.
      Half of the situations above, he could've had less enemies with a simple apology. Yet this man tries to teach poor people a thing about living their life when it feels like he has no idea what their life is like.
      Though I believe his earlier school lunch clean up did include good intentions.

      the way i see it and him on that talk show host is like when bobby flay won on iron chef japan and stood on top of the cooking tables and cheered. there's tradition, respect, and understanding. morimoto didn't like or respect flay after he saw that and it took awhile for him to understand that that's just flay's personality and maybe he took it a bit far in excitement.
      to relate now and through uncle roger react videos.. you dont go say your making ramen with soba noodles, or make fried rice with western hipster ingredients, or make green chili curry with two chilis and a bowl of snowpeas and mushrooms. recipes exist for a reason and jaime seems to be putting his own spin on things (which is fine) but dont go bragging it's better.
      again, traditional ramen usually does not have kimchi, spinach, or the saddest anemic piece of porkbelly. i do that with instant ramen at home. you dont expect some professional chef doing just that. chefs get called out on techniques, and from what ive seen jaime doesnt care about the techniques/traditions of other countries cuisines.
      as uncle roger says: All style, no substance.
      And that also seems to sum up this video's take on jaime oliver..

    I'm his enemy. He took Turkey Twizzlers out of our school dinners. I went to one of the best schools for sports in the UK, weight was not an issue. Once he changed our school dinners, people started losing weight. I remember one dinner there was salad, a potato and some green beans. We needed protein!

    As a chef, it's ok to put a spin on dishes to make it your own. BUT, when you're in the public eye, you have to make it clear that these recipes aren't the authentic dish, but rather inspired. If he had called his paella "Paella inspired Rice and Chorizo", no one would have given a damn
