Made this today with a few tweaks. I didn't have creme fraiche so added just a bit of lemon zest and a squeeze of the juice. Overall, it was amazing. My husband loved it, ate every bit and yes, unashamedly he licked his plate. Will be adding this to our favourites. Thank you for sharing the recipe.
Ohhhh my goodness, that looks sooo tasty Cheryl!! You echoed my dear old dad’s mantra for mashed potatoes “once you think they’re done, mash them again” I’d forgotten he’d said that until you did!!

Looks great! I must say, I find when poaching chicken, bring the water to temperature with the chicken in it. Never let it boil, but slowly poach through. The chicken will be so much more tender.
I did a small dry run of this, with slight variations as I'm intending it for a lunch party which will be gluten,lactose and sugar free. It was easy and utterly delicious, and I realise I can break it into stages and do a lot ahead. As I cook on an Aga, it's always an adaptation to some extent, but this has worked wonderfully. Hi , a wee trick for a crunchy golden brown potato topped pie. Add a egg yolk to your mashed potato. Try it it works really well. Love your cooking show, such yummy food.

James engineered and worked on building many ships; bridges and tunnels here near Sydney Australia Jessie Nairn was still alive till 1962..All of this great DNA was mixed with Aboriginal blood from my mother making a fabulous Donaldson family out here on this great brown land...Just So proud. Thank you for the insight into your living, cooking and thinking..........I would be 3rd gen Scot yet still enjoy the great Scot foods and well ordered mindsets.

YUMS! I'm sure this can be adapted for leftovers. I'm in the US. We'll be having Thanksgiving here in about 3 weeks. Quite often there is leftover turkey. I think this is a perfect recipe for that. And maybe mix up leftover mashed potatoes and dressing for the topping? What a flexible recipe you have. And I love the leeks and mushrooms, too. May 25th here when I found you today, we are having roast chicken tonight as it's my husbands 80th birthday and as it's just the 2 of us to night there will be left overs so will use your idea for some of the left overs. Today is also our son's Birthday he's 50, born on his father's 30th. Had to keep my legs crossed to achieve the perfect gift, our son was our first born.😂😅😂😅
