If you make this recipe, I would suggest cutting back on the sunflower seeds and maybe subbing another kind of seed or nut for the rest of the measurement. I also heard back from the Coffee House Manager and she said that unfortunately, the cookbook is no longer available through the University but that she would be happy to provide specific recipes if wanted. She was very nice! You'll also notice I forgot to saute the veggies in oil 🤣 Oops!! 🤣 I'll try to remember for next time!
Finding great deals like that is a lot of fun. I bought a 50 cent watch at a yard sale and then discovered that the case was solid gold and worth about a thousand bucks. Love your content.
Leta, I think you hit the nail on the head about this recipe being "old school!" It is very reminiscent of the day. Our family had good friends who made such kinds of dishes for all their meals, but they were very healthy and ahead of the times. Thanks for sharing, and I'm so glad you mentioned in the first comment to first sautée vegetables in oil! 😀

This was so interesting. I have never heard of a cookbook that could be worth over $100. Unfortunately, I would have walked right pass that cookbook. I'm so glad you didn't. 😁 That coffee house from the university must have been very popular to consider publishing a cookbook. It would be great to see if any of your subscribers actually ate there. The Veggie Nut Casserole did look good. Sad that the leftovers weren't so good. Hopefully will see another recipe from this cookbook.
I will definitely try another recipe! I was a bit disappointed in the leftover status of this dish but maybe my sunflower seeds weren't as fresh as the sell by date said they were! As fun as the cookbook is I bet the coffeehouse in 1968 was the place to be on campus!
Wow, thank you for this video! I’m a UCD alumna and was looking for a Coffee House recipe, Zen Bars. I found the cookbook online at Amazon, but didn’t want the recipe enough to pay $100. I loved how you thumbed through the book displaying the recipes, as I saw some old favorites, including the veggie nut casserole! I didn’t see the Zen Bars, though, so I may need to contact the manager to see if she has it. Thanks!
Hey Aggie. I'm an alum too, and I bought the cookbook while I was there. Here you go: UC Davis Coffeehouse Zen Bars 3 cups rasins 3/4 c hot water 2 1/2 c fruit juice (apple, raspberry and cranberry are our favorites, but most any type of juice will do. 3c rolled oats 1tsp salt 4 c wheat flour 1/2 tsp. ground ginger 2 tbsp. cinnamon 3/4 c vegetable oil 1 1/2 c fresh fruit pieces, chopped (recommend banana, apple or apricots) 1 c carrots grated (optional) Preheat to 350 1. In one bowl combine the hot water and fruit juice and soak the rasiins in the mixture. 2. In separate bowl combine oats, salt, wheat flour, ginger, and cinnamon. Dribble in oil while mixing on low speed. Mix until just combined. Add in juice and raisins and mix briefly. Fold in fruit pieces and carrots, being careful not to overmix. 3. Spread into a greased 9"x13"x2" pan. Bake at 350 for 30 minutes until firm to the touch.
Chile relleno casserole sounds wonderful but I have no idea where I'd find poblanos in New England (though... there's a large Puerto Rican community near me, I bet they have a grocer!). I'm not sure which ingredient you're sttuggling with finding but I hope you find it! The recipes I've seen online sound great so I'm curious 😊
I can't find the can of chilies! It's crazy! I have found it online though so I'll just do that if I can't find it in the larger cities. The recipe sounds great for a breakfast casserole!

This was fun! Reminds me of my college days in the 70’s! Looks like some good quick bread recipes are in the book too.
