Hello from the south of France and bedankt for your recipe... I haven't had good bitterballen in years (used to enjoy them in Baarn and Amsterdam)!!! I was quite taken aback by "beef poulet" which seems to mean something in dutch that would translate to "ox tail" but I am not sure. Could you describe the part of the beef?

Thanks for the recipe :D It doesnt really matter as im sure everyone will understand what you mean but to help you a little with your pronunciation, STIR, rather than said like Steer, it is pronounced like Purr or Fur, as in STuR. Stir. :-)
