How to make Kroket: Dutch Beef Croquette from scratch

  • Learn how to make Dutch kroketten from scratch. A #Dutch #beef #croquette is a delicious deep-fried snack with a crunchy outside and tender meat in gravy on the inside. It is a very popular snack in The Netherlands and is either eaten by itself, or with French fries, or on a soft and fluffy bun! Fried to a golden brown color, you can find these delicious beef kroketten anywhere.
    If you have ever visited the Netherlands, or you may call it Holland, you probably have eaten one of these delicious deep-fried snacks. Most likely served with some mustard and a warning that the insides are really really hot!
    This Dutch croquette recipe details all the steps needed to make these Dutch favorites. We start by simply making a delicious beef broth and then go on to create a traditional roux. We'll turn that into the filling of a kroket, after which we will bread, and fry them!! To make it easy, we'll use an Instant Pot for making the broth, so it goes a lot faster!

    I took a tour in Marken, Netherlands and watched stroop waffles being made. She told us that putting them on top of a hot drink was how they were traditionally heated and eaten!

    Born in Nederland but moved to New Zealand in 1956. Returned in 1969 and then again last November 23. All i ate was krokets, patat, saurkraut, drop, bitterballen, ollieballen.     Hello! Indonesian with dutch descent here. I was looking for some authentic Kroket recipes when i found your channel. I just surprised that it is not made from potatoes like my late mother and grandmother used to make. This is more like bitterbalen to us (but then i also saw your bitterbalen video 😅). And also we usually enjoy our Kroket with slurry sweet and sour sambal, or fresh chilies. This made me realized how all the recipes has traveled in history and modified throughout time 😀 Thanks for your recipes 😀😀🙏🏻

      @@ToinesKitchen some call it sambal cuka, or sambal jalangkote (sambal for fried pastry). It's basically sambal with vinegar, sugar, and cornstarch to make it slurry (i guess so, i never made one from scratch tho 😅). It's so good with fried snacks 😀

      I think this is the original kroket recipe, cause this is what you get when u visit the netherlands, such as FEBO! Honestly, the original dutch kroket is way better then the Indonesian kroket (potato based).

      Depending on where you live in Ontario I know of 2 Dutch stores that sell them. One is in Norwich Ontario and the other is in Mount Pleasant, Ontario.

    I'm going to have to try it. As a Belgian living in the US since 1998, I have been making many dishes from back home myself, but bitterballen and kroketten have been challenging, with different recipes tried. Many recommend different types of cuts of beef, and often cheaper waste meat. It's interesting you use brisket, and use the instant pot. Going to try this soon!

      Het kan wel... ik vind ze zelf lekkerder uit het vet... maar, zet ze even in de vrieskast, en dan kun je de buitenkant met een beetje olie bespuiten, en dan in de airfryer.
      Ietsje langer, en een beetje lagere temperatuur.

      Using Demi glacé would be a good replacement for the cubes. But I’m not sure if it has enough gelling “power” without adding some gelatin.

      You can use the slow cooker: put the same ingredients in and cook on low for 6-8 hrs. You probably won’t have to cook down the liquid then. Add the bouillon cubes after the meat and vegetables are out, and stir to dissolve

    Toine my question is what part of a Brisket do you use. I am in Texas and we break our whole briskets down. Is the Flat or point good enough and do you leave any fat cap and then clean it up after?

      I use the flat for this. You don't want too much fat in with the rich roux. I do trim excessive fat of the flat.

    My mother made these but not very often as they time consuming...i cheat and but them from the dutch store that gets them from a dutch kroket company...but they are expensive...i may give this a try....what if you dont have a pressure cooker....can you cook meat on stove???

      That looks delicious but a lot of work especially the almost two hours of frying them one at a time. What about using a deep fryer or an electric skillet to hold the temperature of the oil?
      Also can we use rice dream or other non dairy instead of the milk in the egg?

      You can definitely use non-dairy milk, or water in the egg.

    Goeie dag, ek is van Suid Afrika, my skoonouers het vanaf Nederland na Suid Afrika in 1970 geiimmigreer. Ek het krokette by hulle geleer. As ek mag vra waarom sit u Gelatine in die roux? Ek het 'n eg Suid Afrikaanse variase gemaak met Crispy Bacon en Cheddar Kaas. Heerlik hoor

    Oke , its just me but , i never made krokets in that way . i use an old recipe of the 50s and i can say its not even close to how you make the Ragout.

    You use Dutch metric , it would help me if you also said what that means in US measurements please…. Like when measuring for the ragu…. The water etc…. Please? Thank

      It may not show in the video, but the meat definitely falls apart, especially once you stir it through the roux.

      You can probably make them up with what you like. I had 2 Versions in Amsterdam 1 was excellent with meat the other was a no thank you..

    Please don't use grams as a measure, you're in America now, and so am I (born In Rotterdam many years ago).

      Absolute nonsense.
      Being in "America" doesn't mean you can't use the metric system.
      Especially in cooking where accuracy is important.
      I'm thankful he used grams as a measurement.

      Of course, we can use the metric system, but my measuring utensils are calibrated in cups, ounces, and, yes, the metric liters, but nothing about grams. I just flagged it as a usability issue for Americans, at least for this American.

      The written recipe on toineskitchen.com has both metric and imperial measurements. Also we have started putting both in the video graphics.
