Hello everyone! Today I present to you an incredibly delicious and easy to prepare eggplant recipe! Grated aubergine fritters with a very appetizing sauce, they are ideal for lunch, dinner or an aperitif. I make them very often for my family and friends and everyone loves them! A few simple ingredients and a few minutes of time are enough to prepare this aubergine delight. Ingredients:
- 1 eggplant
- 2 eggs
- 150 g of flour
- Parsley
- Salt and pepper
- Oil
For the sauce:
- 3 spoons of mayonnaise
- 1 tablespoon of ketchup
- 1 shallot
- 1 teaspoon of capers

Oh my goodness, it was a childhood fritter recipe. My dad loved it although it was just a bit different, my mom would make it with chickpea flour instead of wheat and thinly sliced eggplant instead of shredded. Ah, so many memories came back of my dad, childhood and granddad. I will make these on weekend and thank you so much. ❤
Yes! Most of all fritters are made with chickpea flour in India!

I’ve done the same recipe with zucchini, cabbage, radish etc., each one was super delicious and tasty! Never thought of eggplant the same way! Well! You’ve stirred up my curiosity and I got to try your recipe with eggplant! TQ!

From the United States, Wisconsin. Grew up on a farm and we’d have these fritters quite often and also made with other vegetables. Tastes great and thank you for sharing your recipe.
What other vegetables would you recommend?
@@joeybagodonuts6683 besides eggplant, we would use potatoes, zucchini, yellow squash, carrots, kohlrabi, cabbage, onions. Whatever we had an abundance of or needed to use up quick we made into fritters. We even would make some with apples, any kind of berries and throw in some pears. It’s such a wonderful and versatile dish.
I’d add some grated gruyere to the mix.

Hi, I'm from Brazil, and I'm vegan. I love your receipts, bit i always substitute the ega for bananas (it's what we use to have the same results) and still really good!

@@hperera886 there are plenty of vegan recipes of this type if you are interested. You can used shredded cabbage and chickpea flour to make pakodas. You can make delicious gravy and put these pakodas in it. Then there are various koftas (just like chinese manchurian dishes). You can make banana kofta, bottlegourd kofta etc.
@@hperera886 So far i did in his other receipt, the one is a egg plant pie, but before I did in other recipes and always works. Is half banana to substitute one egg. The ideal is the banana not so sweet, so the one is more green. But last time I had only the yellow one and the pie was really taste. 😘

Could it be a translation issue? Maybe it was baking powder and not yeast.
Generalmente in Italia si usa il pane ammollato e non la farina per questo non e' necessario il lievito . Comunque al posto della farina io avrei usato farina di ceci e un pizzico di bicarbonato .
@@pieraspisso4265 no, in Calabria utilizziamo farina , niente lievito, niente uova . Per i ripieni invece, come dici tu.
