Hi everyone! Today I present to you a new and amazing recipe for aubergines and rice! Delicious rice balls and pan-fried aubergines are ideal for lunch or dinner for the whole family! They are so crunchy on the outside and soft on the inside that no one will be able to resist! A few simple ingredients are enough to prepare these delicious vegetarian meatballs. I make them often and I never get tired of them! Try this easy and delicious eggplant and rice meatball recipe! Let me know in the comments what you think! Bon appetit and good day my friends!
Ingredients:
- 1 glass of rice
- 1 eggplant
- 1 tablespoon of tomato paste
- 1 onion
- 1 clove of garlic
- 3 tablespoons of Parmesan
- 3-4 tablespoons of breadcrumbs
- 1 egg
- Parsley
- Salt and pepper
- Oil

Very nice recipe chef 👍👏👌. I made them with some leftover quinoa from yesterday, and instead of breadcrumbs I used oat flour, delicious yummy 😋. Next time I will try them with brown rice. Thank you for your effort 🌞😎
Thanks for the variations. I plan to try with plantain flour and substitute the egg and bake instead of fry.

OMG this looks so delicious!!! I have to try this soon one day. My mom is the best cook ever. She use to cook for everyone, we would have family gatherings for everyone, family members church members and very close friends. Others would bring dishes when they would come, but my moms cooking was the only food everyone came to eat. Her nieces and nephews, their husbands and wives and children all use to come over to eat my moms cooking. And she would prepare and cook everything from scratch. No boxed NOTHING. All of my moms recipes or meals when cooking tasted at it's very best, from baking cakes and making other desserts to cooking anything. My mom even made homemade ice cream in which I made for my 2 kids. None of us can cook exactly like our mother, but we can pass a test in cooking. My mom seriously should have had her own catering business or she should have opened several restaurants. Whenever I use to go home to visit since moving away she would always prepare my favorite meals and desserts. But now she isn't able to cook like she use to, but will be sure to tell you how she wants her food prepared. She is so picky when it comes to food, all because she knows exactly how to cook adding the correct ingredients and amount to anything and I mean anything, giving it the perfect taste. No exaggeration. I had been trying for years to get her to write down the recipes for all of her meals so that I could create a recipe cookbook for her to sell if she wanted and to importantly keep in our family, but she never took the time out to do it. I told her to just give me a recipe a day. I myself have 3 cookbooks, 2 authored by me and 1 authored by my children, a children's recipe cookbook. My children were picky eaters growing up, especially my daughter. My mom knows how to do all kinds of things, she came from a highly educated and very creative gifted talented hands on family. We use to call them the stuck up bunch, who my mom and dad had to help become now a humble bunch of people who grew to have more and more love and adore my parents, because of the kind of people my parents always were towards them. But I do believe that we inherited those similar stuck up ways, because my mom alone can be something else. My parents are excellent hospitality people and have always invited people over and their families. People would eat all they could and would leave with food to take home most of the time, but only if there was any food left. No exaggeration at all about my moms cooking. I love these videos. I am not only a traditional cook whenever I do cook but I also love to try other different kinds of recipes ways of cooking and eating. I do not cook as much as I use to nor do I cook in the same way I use to anymore, except maybe for the Christmas or Thanksgiving Holidays. But When I do try this recipe I will post how it turned out. The finished product here looks so delicious. Not sure why I decided to share all of this. Probably because Mother's Day just passed, and my mom spent mother's day back in the hospital because of high blood pressure and other health scares, but I thank God she is out of ICU and is doing well. And also, I guess because of the many cherished precious unforgettable memories we all shared when it came to family food gatherings as well as sharing many other unforgettable memories. I am a sucker for excellent tasting food. My first cookbook was given to me by my great aunty when I was in my early teens. My Great Aunt Margaret who use to live with us, who use to take me out of town with her when she went on vacation or family reunions. Of course I would help my mom cook, but my first time cooking was cookies from scratch, recipes from the very thick cookbook that my great aunt gave me. My mom and a long time family Church friend who wanted me to marry her son, she and my mom use to tease me about baking only cookies for my husband (and they would mention her son's name as my husband, which was so weird at the time, because he would be there also laughing) whenever I got married. Which did not turn out to be true, lol, about me baking cookies nor about me marrying her son who was by the way very handsome. I did find out way later that he liked me a lot, but never had the nerves to approach me to let me know. Why some men do this I would never fully understand. And he is still not married to this very day, but now have children by multiple women. While sharing about my moms cooking brings back lots and lots of memories and I am telling some of my business, lol. Maybe I need to stop watching some of these TH-cam videos whenever I get the chance, because I find myself commenting toooooo much at times. Well I guess thinking about my mom, her cooking and how she is, pulled all of this out of me at this time, yes I'll blame it on that, lol. My memories are all over the place. Anyway, My mom messed us all up when it comes to cooking and eating excellent tasting food. When she is watching us cook we can get a little nervous.
