Caribbean Stewed Chicken With Red Beans Recipe.

  • A delicious recipe for making stewed chicken with red beans as it's done in the southern Caribbean. Using a traditional Trinbagonian (Trinidad and Tobago) method of marinating the chicken in fresh herbs, then it's stewed in a lovely browning made form brown sugar, after-which the kidney beans are added to be infused with all the lovely Caribbean flavors.
    You'll Need
    3 Lbs Chicken (I like using drum sticks)
    1 scallion
    1 onion
    3 cloves garlic
    1 teaspoon ketchup
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    1/4 teaspoon grated ginger
    3 sprigs thyme
    3 drops Worcestershire sauce
    1 small tomato
    1/4 scotch bonnet pepper
    2 cups water
    1 can red kidney beans (rinsed/drained)
    1 tablespoon brown sugar
    1 tablespoon veg oil

      S. Greene...this meal turned out great. I held back on the spice because of my husband taste buds but in my opinion this dish is better spicy. I tried his stewed Curry chicken and it was so delicious!!!!!!!

    I too use white sugar as your mom does, but I much prefer the brown sugar with oil method. just a preference thing I guess.

    I always add some ketchup while the sugar is burning. That way it don't get that bitter taste. Some macaroni pie with this.

    ok ive made the dish. i've sauted the golden brown sugar and then added the chicken, but the problem im facing is, i dont understand how your chicken leaked out all those juices, while mine just stayed dried and almost fried! i had to add some water just to keep it juicy.

    I've seen some FAR more fattening recipes. So much grease used that I couldn't call it gravy, but greasy.

    if it's goes "burnt" it will go bitter and ruin the dish. you have to be mindful of this when cooking stew this way. look for an amber colour and you'll be good.
