Love your dough recipe. I think it's important that beginners understand, it's best to freeze the dough 1 hour! Then let it rest 10 mins on the counter. If it cracks, it's to cold, but you can keep reforming your disc. If it gets to warm, place the dough back into the frig. Take your SECOND crust and place in the frig, while working your first crust. After you work your first dough and have it in the pie plate, just place it into the frig while you're working the second crust. This helps everything to your pie to cook even!!! If your using fresh fruit. Prepare all the ingredients and place in the frig till you're ready to place it into your pie dough. If you use frozen whether it's fresh/frozen or store bought, it needs to sit on the counter and come to a warmer temperature so everything bakes evenly. IF you use frozen go ahead and tent your pie. Otherwise your crust will brown before the fruit bubbles. Also if you're using a ceramic or tin pan, you can't see what the crusts are doing. DON"T OVER BAKE!!!! Egg wash is pretty but it will make your crust BROWN faster!!!! so just be aware of this!!! Marie does teach the best PIE CRUST method for beginners or those who are having difficulties with their homemade crust. NOTE: I grew up with crisco, it melts fast even if you freeze it, so you MUST freeze it 1 hour.
