It was build like any other big building at that time...more slowly but surely..often a communal effort that took many generations...no mysteries...and it was already largely a 19th century re-imagining ..that is basically what they are reconstructing...the idea that these buildings are unreconstructed time capsules straight from the middle ages is mostly false..still as a symbol it is very potent and worth the effort
Well, for one, they had cranes, primitive but they worked. Not the massive 300 foot tall ones, much smaller but good enough to atleast lift the lumber and stones up to the roof. Second, they didn't build the spire in another place and then lift it all up, nay, they built it right there on the spot, on the top of the roof.
