- Yum Woon Sen is a popular Thai Glass Noodle Salad made of beanthread noodles/glass noodles, with many textural components, and tossed in a vibrant, citrus and savory dressing. Yum Woon sen can be found in practically all Thai restaurants across the world. It's a great dish to prepare for loved ones and best to eat right away after preparing. The flavors remind me of home and youth.

INGREDIENTS (best to eat soon after preparing)
Bean Thread Noodle/Glass Noodle - 2 bundles (about 70g)
Chinese Celery - 2 stalks
Roma Tomato - 1 tomato
Shallot - 1 bulb
Shrimp - 6 (large)
Squid - 3g (1 cup)
Dried Shrimp - 1.5 tbsp (soak in hot water for 5 min)
Ground Pork - 1/2 cup
Roasted Peanuts - 1.5 tbsp
Cilantro Leaves - 1 small handful
Fish Sauce - 1 tsp to season pork (see video)
Seafood Water - 3/4 cup (see video)
Dressing/Sauce
Sugar - 1 tbsp
Fish Sauce - 2 tbsp
Fresh Lime Juice - 3 tbsp
Garlic - 3 cloves
Cilantro Stem - 1.5 tbsp
Chilis - 7 chilis

STEP 1:
5:23 PREPARE NOODLES
* 2 bundles of glass noodles (~70 gm. per bundle)
- SOAK in tap water 💦 for 10 minutes
- DRAIN water & cut noodles into thirds
STEP 2:
5:10 PREPARE TOPPINGS
* 2 T. dried shrimps, soaked in hot water for 5 minutes then drained (optional)
* 2 T. peanuts, unsalted & roasted
- SET ASIDE
STEP 3:
1:30 SLICE VEGETABLES
* 2 stalks Chinese celery
* 1-2 Roma / cherry tomatoes
* 1 shallot
* 1 cup cilantro 🌿 leaves
Step 4:
2:55 PREPARE DRESSING
* 3 cloves garlic, pressed with side of knife then minced
* 2 T. cilantro 🌿 stems, pressed with back of knife then minced
* 1 - 7 pieces fresh chilies 🌶️, chopped
* 1 T. sugar
* 2 T. fish sauce
* 3 T. lime juice
- MIX all ingredients
- SET ASIDE
STEP 5:
5:40 COOK SEAFOODS
* 6 large shrimps, shelled and deveined
* 3 gm or 1 cup squid 🦑, cleaned & sliced
- BOIL 2 c. boiling water 💦
- COOK squid 🦑 then shrimp for about 1 minute
- BE CAREFUL NOT to overcook
- TRANSFER shrimp & squid in ***ice cold*** water to stop the cooking process
- DRAIN & SET ASIDE
- SET ASIDE 3/4 c. of seafood water
NOTE: It’s best to do steps 6 & 7 ***right before*** you plan to serve and eat it.
STEP 6:
6:25 COOK PORK & NOODLES
* 3/4 c. of seafood water
* 1/2 c. ground pork
- COOK pork in seafood water
- ADD soaked glass noodles
- COOK noodles until slightly al dente. Be careful NOT to overcook.
- DRAIN any remaining liquid
- TRANSFER into a bowl for assembly
STEP 7:
7:15 ASSEMBLE all INGREDIENTS
- COMBINE all prepared ingredients with glass noodles and pork
- SERVE immediately
making noodles
