Victoria Sponge Cake Recipe for Beginners | Mary Berry Classic Victoria Sponge Cake Recipe

  • This Victoria sponge cake recipe is from Mary Berry Cake book.
    Ingredients:
    250g self raising flour or all purpose flour
    250g white sugar
    250g butter at room temperature
    1 tsp baking powder if you are using self raising flour OR 2 1/2 tsp baking powder if you are using all purpose flour)
    4 eggs at room temperature
    2 tbs milk
    1 tsp vanilla essence
    Raspberry or strawberry jam
    150g all purpose cream + 1 tbs powdered sugar
    2 tbsp Powdered sugar for decoration
    Pre heat oven at 170 or 180 degrees celsius (depending on your oven) before preparing the cake. Line your baking pan with wax paper.
    Pan size is 8 inches round.
    Enjoy!

    Great video thanks. I’ve not had success with other versions however. A few things. My hand mixer seems less powerful and it doesn’t produce a silky smooth batter like yours. I have an older kitchenaid stand mixer but I hear so many people say don’t over mix. I also notice you use milk which may make the batter less stiff. I have always added the eggs separately but Mary B herself seems to recommend the all in one method.
    Lastly what size pans ? Sorry for all the questions I’ve had a couple of not so good results so I really want this to work.
    If it does I’ll dedicate it to you lol!✌🏻🙏🏼

      Hi, the secret of this is to make sure all your ingredients are at room temperature like the eggs, milk and vanilla. It’s very important that the butter is very soft!!! This might take a couple of hours. Or you can cut the butter into thin slices to help it reach room temperature quicker than a whole butter. Definitely do not overmix, if you can see that your cake batter have few tiny lumps, you can mix it further with spatula than the mixer. This way you can reduce the chance of over mixing your batter. My pan size is 8inches round pan.
      P.S sieve the dry ingredients as well and make sure your oven is preheated and at the right temperature. If you are using whipping cream, make sure not to over beat is as well or you will end up having a lumpy buttery whipped cream. Whipping cream is optional although I like it better with whipping cream.

      I personally haven’t tried it but I think it is possible to half the recipe. Just use smaller baking pan.

      If you will use self raising flour you don’t need to use baking powder anymore.
      If you will use all purpose flour you will need to add baking powder.

      Sorry but preparing your pan won’t even take you a lot of time. Either you use a spray or a wax paper it won’t ruin the batter if you haven’t prepared them beforehand. If you are unhappy about the video, give it a dislike and move on. Other people doesn’t like a long video so I cut it down. I was hoping you can use your common sense since you sound so intelligent.
