- Assassina - Killer pasta!!! Easiest and smartest Assassina pasta (Killer pasta) ever. One pot pasta. Easy dinner. 20 minute killer pasta. A simple, quick and very tasty dinner recipe. Delicious and quick killer pasta recipe. You won't believe how delicious it is. Try this simple and delicious recipe and leave a comment below: "How do you like it?". Have a delicious day! 🤗
Ingredients for 4 persons:
0,9lb/400g of fusilli.
1,55lb/700g of tomato sauce.
2 spoons of tomato paste.
3 garlic cloves.
1 chili pepper.
Extra virgin olive oil.
Salt.
1USqt/1l of Water.
Method:
In a saucepan add 1USqt/1l of water, 2 spoons of tomato paste, 10,5oz/300g of tomato sauce, 0,4oz/12g of salt and bring to a boil, then cook for 5 minutes.
In a pan sauté oil, garlic and chilli pepper; add the remaining tomato puree, bring it to temperature and add the fusilli; mix, spread them as much as possible and let them toast. Once the crust is formed, turn them. When the crust has formed more or less evenly, add 2 ladles of tomato broth, not on the pasta, but on the side of the pan. The pasta should not drown! Once completely absorbed the broth, wait 10 seconds and add more. Repeat until the pasta is cooked, about 8/10 minutes. For super spicy lovers, stir with 2 tablespoons of spicy oil.
Serve naked and raw.

It's a pretty quick pasta recipe; from when you start making tomato broth 25-30 in total; for the pasta 10-12 minutes maximum from when you put it in the pan, however it depends on the cooking time of the pasta you use, the first few times you need to taste it. Hi and thank you very much! Cooking pasta directly in the sauce, called "risottatura", is a technique quite used in professional kitchens; it's the same as risotto! Excellent for highlighting flavors and widely used with shellfish ( th-cam.com/video/SZhtxwEOKB8/w-d-xo.html )! The Assassina, specifically, it's a relatively recent recipe from Puglia, 1967! It was born with spaghetti ( th-cam.com/video/tFMg0_bLO58/w-d-xo.html ), I reinterpreted it with fusilli (or more generally short pasta) to make it simpler! 😊🤗

The entire process of Assassina seems to be to expend as much time and effort as possible in order to burn your pasta. I'm sure it tastes good but damn... I don't have the time. I hope all you other folks have time to try and and that's it's GOOD.

Tbf its like 15-20 mins so not that long. And its pretty fullfilling! Its cheap too since you basically only need some pasta and tomatoes (+maybe some garlic).
Its a really tasty low-budget meal :)

Do it the way my mom does it, actually boil the pasta in the broth in a pressure cooker, and let the water dry out until it crusts, then serve it. (She doesn't make the assassin's pasta, it's her own recipe and she burns it by accident, but I grew accustomed to the burned pasta taste)

@Pastaandbastarecipes Watching you preparing stuff has a soothing aspect to it. I think, part of it is, that you edited it just right. Not too many cuts, which on one hand is great for in-depth presentation/ explanation - but it's also great for asmr (some people do a lot of cuts, resulting in a rather, like, somewhat unnerving style of presentation).
The only thing I'd like to add, should you decide to try some asmr vids: I think, if you'd lose the background music and just leave in the background noise of the preparation process instead (maybe *slightly* muffled), that'd make for a pretty decent asmr clip. Just a thought.

Беру итальянскую банку помидоров очищеных и еще черри помидоры нарезаю и свежий базилик. В чугунной сковородке филе курицы кубики жарю и после заливаю томатной из банки и томаты черри с базиликом кладу. И макароны прокаленные заранее с верху и жарю 5 минут. Потом сыром пармезан посыпаю в конце.
I was sceptical at first, but 2 min into the video it all came together. Interesting choice of noodles for Assassina, the result looks delicious.

Hi, I make the spicy oil myself, like the rest of the chillies! I dry the cleaned chillies (cut in half and remove the seeds), then I put some in the jar with the oil; in the pantry, in the dark, in a month it's ready! The amount of chili peppers depends on how potent they are and how spicy you want the oil. I use extremely hot chili peppers, so you don't see much of them in the jar! I recommend using Habaneros, they are the most fragrant! 🤗

This pasta cooking method is called 'Risottata' Because you cook the pasta like was a Risotto, this is used widely in Italy not only for the Assassina but also for any of the pasta with legumes 'pasta and fasule' pasta with beans, chickpeas pasta, lentil pasta, broad beans pasta and a lot more.

Из-за того, что у меня мало времени, я обычно соус и пасту готовлю и храню по отдельности, так она лучше сохраняется на второй день т.к паста не размокает, а даже наоборот немного подсыхает. Остается на второй день только это вновь соединить
Но если готовить пасту подобным образом (с корочкой), то она сохраняется такой на второй день или тоже уходит из аль денте в размокшее месиво?
С этой пастой не будет проблем на второй день, если вы ее правильно приготовите (имею ввиду, если она будет хорошо поджарена, без жидкого соуса). На след день просто хорошо разогрейте на сковороде с небольшим количеством оливкового масла. Мы обычно готовим на один раз.

At Spain we have a dish called fideuà that is a kind of paella where the main ingredient are noodles. It is a cleaver way to cook pasta than this. Traditionally is made with fish broad and seafood but you can use whatever ingredients you whant.
Thanks for your opinion! The original recipe is like this and I didn't invent it. The only thing that Assassina makes with spaghetti, we made with fusilli (which is easier to handle). This pasta recipe has its own history, its own technique, it is perfect as it is. But tastes are tastes and you could always cook your own way and add any ingredients as you like.

However, in the original recipe which is made with spaghetti, half the sliced garlic is burned with the spaghetti, and half of it is removed. Tomato paste is highly concentrated tomatoes, i.e, contains quite a lot of sugar. It'll often singe around the edges but probably doesn't actually taste burnt. Similar to BBQ marinades with high sugar content, sometimes they look blackened but still taste amazing.

I do it by first making the tomato sauce with grinded meat, sliced onions, meat stock and tomato sauce, after the sauce is ready I cook the pasta for 3min them put it all together
