I LOVE Beedos! Don't get to go very often, but when I do it is always fabulous. The biggest factor to me is consistency, as I wouldn't recommend a place to someone unless I knew it was good every single time.
Lady's Island Dockside is always packed but it's hit or miss, they also always have cooling problems imo. More of a tourist trap vibe to me, but amazing cornbread. Some of these places I have yet to go to. Red Rooster has amazing food, but the kitchen struggles at times due to lack of local staffing.
I would suggest you go back and review some of your choices, some of these places are the worst in Beaufort. dining at Plums is always good, I've dined there for 16 years and have always had excellent food. Saltus in probably the best for fine dining, Wren has it's good and bad days depending who the chef is at the time. I've tried all you have mentioned and other than the ones I have named I'm a little more cautious about where I would dine. One which I will not named was cited on several occasions for having a very dirty kitchen. You owe it to your readers to make sure all these restaurants are not only serving good quality food but have passed all sanitary codes.

You missed Roadhouse Ribs, best BBQ in Beaufort. I recommend the Brisket, ribs, pulled pork, mash potatoes and gravy (a must), and the onion straws. And if you want to die, the burnt end mac and cheese :)
You also missed best pizza Piace Pizza on lady's island. Hands down best around. Recently went to Beedoos for burgers it was very good, best in the area so far, but it's more of a fast food /take out vibe place unless you like eating basic with no AC sometimes.
Ill be visiting in coiple weeks from WA state. This has helped to plan my selections.
Griffin is closed, old bull tavern is a great one. Best burgers and casual dining is beedos by far #1.

Try Yummys and Ryan’s pizza for pizza and Japanese near Walmart.
