  • Spicy Coconut Beef Stew
    My grandmother has a neighbor that I’ve known all my life. When I was younger, and even when I grew older, I would go up to their fence in hopes of receiving fresh vegetables. This neighbor, Dorothy, ended up moving to Thailand in retirement to provide service to those in need. When I turned 18, I saved up by working at fast-food joint and went to Thailand. I taught English in a school, and I will never forget my first day. In the cafeteria I was given a bowl of rice with some sort of stew on top (same as all my students). I sat down at a table with many of them. The first bite was rich, comforting, and full of new flavors. It was only after far too many heaping bites that the full heat of the dish drew all the color from my face and all the tears from my ducts. I was the talk of the whole cafeteria and the next day, the lunch ladies, to my chagrin and gratitude, gave me special bowl. The soup had tomatoes, potatoes, coconut milk, and red-hot chili peppers and it became a staple in my diet, though I still don’t make it quite as hot as the kids in that cafeteria prefer. Eating a dish can completely change your life and now I always have a can of coconut milk in my pantry.
    RECIPE:
     Spicy Coconut Beef Stew
     1/8th cup (1 heaping tbs) olive oil
     3 cloves of chopped garlic
     ½ yellow onion
     3 jalapeño peppers
     1 Cayenne pepper
     1 tsp sesame oil
     ½ tbs soy sauce
     1 package of beef stew chunks
     ½ tsp of salt
     28 0z vegetable stock (not all stock is equal, Asian import stores have great stock)
     ½ green cabbage
     3 medium tomatoes
     Two handfuls of vegetables you need to get rid of (for me it was bell peppers)
     Two handfuls of vegetates you need to get rid of (for me it was broccoli)
     1 can of coconut milk
    1. Sauté everything on medium except vegetable stock, coconut milk, beef for 3-4 minutes.
    2. Turn heat high and add beef, continue to stir to avoid burning. 2 minutes.
    3. Add stock and coconut milk let boil for 5 minutes.
    4. Simmer on low for 45-60 minutes.
    Ahoy! Since I was eight years old, I have been the chef for my three (as in triplet) little siblings. They would order pancakes, grilled cheese sandwiches, and egg sandwiches (to name a few). With each plate I set down there would be a large bite missing from their entre and when they asked, I would joke “the missing bite is due to taxes.” Cooking for three kids taught me that no matter how much you argue, sometimes personal taste is just personal taste. One spec of corn could mean an entire dish would go uneaten. My siblings taught me that food is a celebration of what makes us unique. When I go to restaurants, rarely, I realize that the food is a one size fits all. The restaurants veer away from delivering daring flavors for fear of those with an aversive palette; the result is often a rather uninspired meal. When I started at university, I was more concerned with making cakes than with studying my course material. I went so far as to put flyers up throughout the dorm with the declaration “EVERY SUNDAY, FREE CAKE DORM 707!” You would not believe the uproar this produced. The RA’s (the student supervisor per floor) would be shutting down cake parties on Sunday at 5:00pm for as long as I lived there quoting “exceeding weight capacity for the seventh floor”. And though I’d claim it were my culinary skills, the truth is seen in the circumstances of any hungry college student. Food can be a remarkable medium for bringing people together. Providing food is a social interaction as old as time and it’s a sentiment every culture appreciates. Less and less people are cultivating their own taste, and quite frankly I miss the era homemade dinner parties. We all have our preferences, and the kitchen is a wonderful place to learn more about yours. Kneading dough, chopping onions, and working with hot liquids is the surest way to find what makes your palette distinct. Host your friends over for a long-needed home cooked meal, by sharing your taste you’ll learn more about theirs and I never tire of talking to someone about the food they can’t live without.
