Sex is binary and immutable and matters in certain areas of life, gender is the behaviours/expression etc associated with male and female, it is a spectrum between feminine and masculine with gender neutral in the centre and it is SOCIALLY CONSTRUCTED, that is probably the most important bit. The problem is that trans ideology suggests that people have an innate gender identity, this suggests something "real" or fixed, whereas a gender identity is socially constructed - so pink for girls and blue for boys. Trans people can have things from the "gender spectrum" which are feminine or masculine and not typically associated with their sex but it does not literally make them the opposite sex, their gender identity is a social construct and their biological sex cannot be changed.

When people use the word gender, they are actually referring to the spectrum of Masculinity and Femininity. Men can be feminine and women can be masculine and we are all a shade of both regardless of our sex.
You can't profess to know what it is to which people are referring when they use the word "gender". You can only know what you mean by it, and what those mean who express what they mean by it. I used to use it when I was referring to sex. Now, I don't use it in my own speech, as its new meaning is purely ideological and political. I would consider myself left-ish, considered for Europe, could be that this is a "rabid commie" in the US, having said that, I do love science, alsways like to search for the truth and can only shake my head about the trans-mania that is taking place at the other side of the pond. FUnny thing, I am a tall, totally non-gender confirming woman, just turned out that way, but made my peace with not fitting in. I think it is really important to teach acceptance and a kind of tolerance or wellcoming of the wide variety of shapes and sizes the human body can appear in.
