This! If its not going to be removable, you can finish it with something more permanent like poly, so you don't have to oil it. Just protects the entire block in the long run.
Wood expands and shrinks with the moisture level so it is importent so treat all the surfice areas the same. A untreated underside could expand more than a treated top because it is not as well protectet and you maby end up with a unwanted warp in your surfice.
The diagonal to match the floor is such a perfect small detail that really ties everything together nicely. Great job, can't wait for the full kitchen reveal!

The juice grooves in butcher block cutting boards are super useful. Pretty simple to do if you wanted to add them, just use a ball end mill on the CNC and cut around the corner. Cutting briskets, steaks, chicken, etc...keeps it from dripping on the floor. Awesome project and loving the kitchen.
Thanks! I might, also made some end grain cutting boards that I'll probably put on top of these for heavy duty use, since they are more durable than the side grain
We have a semi-retired wood machinist at my work that makes these out of off-cuts from our workshop. He made me one an inch bigger than my turntable which I then mounted on isolation feet to give truely isolated surface for my record player.
I hate that some day we won't have more "Building renovation" episode. It has been a lot of time since I have been watching this I don't want it to stop.
Butcher block looks amazing! As others have said, seal ALL sides and then seal the edge between the block and the concrete to prevent liquids from flowing down. I would have loved to see an end grain cutting board instead. But that's my personal preference.
Look great! One thing I think I might have added tho is have it overhanging the island a bit on the end. That way when you’re using it you have room to move furether over the butcher block and don’t have your feet hit the island.

This looks so good. The designed woodwork contrasts and compliments the more industrial feel of the concrete very well and adds an element of high quality homely-ness that makes the kitchen really pop
I’d have made it level with the concrete, but ideally removable so you could clean the grit that will eventually get in the seam (no matter how you do it-the grit will always find its way in). But hey that’s just me.

I love the diagonal! It turned out super sweet. May I leave a tip for the future? If you're dealing with diagonal shapes, you can always build a trapeze and cut the overhanging triangle off and glue it to the other side. Works for me every time. I have a suggestion. Use your new cutting board counter for vegetables, herbs but get a small cutting board for meat products that can be placed in the dish washer. Your kitchen is beautiful.

I think the diagonal formation and wrap around appearance gives a high end custom look to your countertop. A much better look overall. Not like all the other butcher block countertops. Fantastic job.
6:00 - why didn't you do 45' on (at least) one side to set a consistent ~1/4" overhang for trim/square, then you'd have the next 45 already ready for the next board. It would have resulted in a lot less waste than chopping off every square end + overhang.

Will also help prevent any mold growth. I know I wouldn't want to flip this thing to clean it every time I cooked with that stovetop being so close.
Personally, I'd run a line of silicone to seal that gap.

I would have liked the butcher block level with the concrete countertop. Easier to slide things over and wouldn’t visually break up the length so much

You did a side grain??? It's going to be a lot easier to scar with knives. I would have done end grain, and made proper butcher block.
