- Masala Paniyaram is a South Indian snack made from fermented idli or dosa batter, spiced with onions, chilies, and herbs. Here’s a simple recipe:
Ingredients:
For the batter:
2 cups idli/dosa batter
1 small onion (finely chopped)
1 green chili (finely chopped)
1/4 cup-channa dal (grated)
1/4 Kg grated Potato
1 tbsp chopped coriander leaves
1 tbsp oil
Salt (if required)
Instructions:
Prepare the tempering:
Heat oil in a pan, add mustard seeds and let them splutter.
Add Channa dal, chopped curry leaves, green chili. Sauté for a few seconds.
Add chopped onions and sauté until translucent.
If using grated carrots, add them and cook for a minute.
Let this mixture cool down, then mix it into the idli/dosa batter.
Cooking the Paniyaram:
Heat a paniyaram pan (appe pan) and grease the molds with a little oil.
Pour spoonfuls of batter into each mold.
Cover and cook on low-medium heat for 2-3 minutes until the bottom turns golden brown.
Flip the paniyarams using a skewer or spoon and cook the other side until crispy and cooked through.
Serving:
Serve hot with coconut chutney, tomato chutney, or sambar.
