Wait... i thought you used an Eastern grip... you are using a continental here... do you grip switch? Or is this just for lower level teaching purposes?
Is there a reason why volleys would just die? I feel like I've had so many situations where the ball is coming at me, I'm in a ready position, and then the ball just dies on contact with the paddle.
The sweet spot on pickleball paddles can be pretty small; I’d guess you’re catching the ball too close to the frame of the paddle and missing the sweet spot.

Another possibility is your grip, a soft or loose grip will defuse the speed.
