L.A.'s Best Pastries - Colossus Bread + Pastry

- After a year of popping up at farmers markets and coffee shops, Colossus Bread + Pastry has officially opened in San Pedro, California. Head baker and owner Kristin Colazas Rodriguez previously worked in fine dining restaurants and commercial bakeries in both Los Angeles and San Francisco, before pursuing her dream of opening a bakery and café near her hometown of Long Beach.
Her partner in business and life, Nicholas Rodriguez, manages the coffee program. They serve drip coffee as well as espresso-based beverages. Colossus Bread specializes in natural, artisan bread made the old-fashioned way - with local grain milled in-house. They offer a large selection of sweet and savory croissant-based pastries that highlight the seasonal and local offerings from Southern California farmers.

I live just around the corner from the bakery. We were very excited about its opening because there was a very good bakery just before it in that same location that closed up.
The pastries and breads are very good.
What has dampened our enthusiasm for the place is the fact that their pastries run out very early and that's it for the day, no más.
They need to find a way to keep them well stocked throughout the day because the times I've been there I've seen other people in the same boat as me. They show up and them turn around and leave empty handed for the same reasons.
They're leaving a lot of $$$ on the table.
Hopefully they manage to bake more, but this is the downside of being extremely popular, I guess. Hope you get to taste them one day. :)

The title says "L.A.'s Best Pastries" Wow, almost everything was way way overcooked. It should have been tossed in the garbage, not sold to paying customers and definitely not listed as "Best".
You're wrong. You judge with your eyes, we judged with out mouths. Dark spots are caramelized, not burnt. Caramelization gives flavor.
Thanks for the video. I’m not a bakery expert but I must say…the croissant 🥐 looks burnt and bakery looks dry overall.
Sorry, but you couldn't be futher from the truth in your guesswork here. This is one of the finest bakeries in Los Angeles. We got pastries 7-8 times here in the last few months, and there's nothing dry about their baked goods.
You are very WRONG. The croissants are delicious! I encourage you to try their pastries especially the croissants.

I think what you're seeing is caramelized sugar on the bottom of some of the pastries :) everything was baked to perfection!

Sorry. OVERBAKED. Chared. Lack of Puff paste variety. Alternate base dough limited. Lack of butter in flake. Croissants should be wit butter and choice of fruit preserves with should be offered.

Why everything looks burnt...
It's caramelized, which gives it an amazing flavor, and not burnt.
It looks a bit burnt.
It's not. Good bakers know how to achieve the maillard reaction (caramelization) without burning pastries. It gives depth in flavor.

k son Sorry, but you are both wrong. They are caramelized perfectly. Burnt tastes bitter. Caramelization gives a deep sweetness which is desired in pastries. We tasted them and can assure you they were not burnt.
