Did you apply electrically insulated thermal paste to the 662K voltage regulator? Did it heat up noticeably after wrapped up into the thermo retractil plastic? It makes me uneasy on the approach. Will try to waterproof a case instead for mine.
Thanks for the advice on grounding the outer shield of the wire. Probably for the best. And removing the grove header is a good idea to minimize interference. Not sure if the internal stability of the reading is accurate enough for the extra work to be noticeable though, is it?

After having it outside for so long has the sensor corroded

hello, if we burry it under the ground, will it still work?

What have you done to the side of the PCB circuit board? This is open and water can enter there

Hello Harry, thanks for your message.
In most cases we won't treat the sides of the sensor. The copper is cut back enough the sensors seem to hold up over a given - but the sensors should be recalibrated every month or so to compensate for any saturation effects, which is good practice regardless. We see sensors lasting 1+ years in the field using this technique.
With that being said, we have customers request treating the entire sensor (sides included) with the same urethane sealant used to protect the electronic components - this also protects the edges from saturation but limits the capacitive range of the sensors (analog output range decrease from ~250-750 to ~550-750).

      Try epoxy and recalibration.
