    BROWNIE MOCHI !!! YES omg, food of the gods!
    Believe it or not, I have been looking for this recipe for over 30 years. I ate this when I was in Hawaii, but never got the name of it. And for 30 years, I have been trying to describe this to people, and searching recipe sites, and cookbooks, but to no avail. Bless you. I am making this today !

    I cook it in a brownie pan that has carved out squares in the pan so that every piece has 4 edges! Crispy edges are the best part

    I’ve tried several butter Mochi recipes and this one is my favorite. It turned out so well. I live in Hawaii so I’ve had a lot of butter Mochi in my day lol. Mahalo for the video/recipe 🙏🏼

    I think we've got similar stuff here in Indonesia. It's called wingko. A bit different with coconut shredded mixed in the batter. Looks delicious Gem. Thanks for the recipe.

    I used to make almond slices which is my grandma recipe and looks exactly the same. It has almond meal, ricotta cheese condensed milk, eggs, saffron, green cardamom powder and butter.
    Definitely I will try this recipe soon.

      Mochi is made with glutinous rice, which is turned into flour and eventually into a rice cake.

    If you live in a large city, you should have several Asian supermarkets that would carry Mochiko and some regular grocery stores where I live actually carry it. I use it regularly to thicken things like fruit sauces. It's great stuff.

    Dear Gemma, this mochi cake is one of my favorite. I usually bought the cake mix box at Trader Joe in a limited time only. Now, I can make it anytime I’m craving.

    An important question for me as a person with diabetes is, can we cut 1/2 the sugar portion and still have the same result?

    Thank you for sharing your version of this (I voted for this!). Two questions. I made an ube version of this a few weeks ago. It turned out pretty good but it began with melted butter at the beginning. Is there a reason why you add room temp butter at the end? Also I understand the baking powder gives it a rise but I felt it took away from the chewy texture. Do you think it would turn out well without baking powder? Thank you!

      Hi Jacqueline. The butter is added last because I wanted to mix the rest of the ingredients first, so there are no lumps when I add the softened butter. That way, the mixture comes together easily. If you add softened butter and there are some lumps, it may not blend as well. The baking powder will not take away the chewy texture as the mochiko flour is naturally glutinous. It will just make it rise a little, preventing the whole thing from becoming too dense and sticky that it won’t be as pleasant in the mouth. I hope this helps.

      Hi Tina. You can use all coconut milk but I don’t recommend leaving the butter out as it would change not only the flavor but also the consistency of the bake. One baker is trying vegan butter, but I’m not sure how it will turn out.

    That look delectable! Simple and straight forward recipe 👏 I say...it kinda look like a 'bingka', a cake originated from Brunei or Malaysia, but uses custard powder for taste and colour.

    hey went to a cultural festival and tried these hawain mochi, and feel in love with them.
    your recipe looks so easy to replicate :) but can i skip coconut milk?

      I don’t recommend just leaving it out, you can however substitute it with milk. Hope this helps.

      @@biggerbolderbaking Thank you i made with the same ingredient as yours and it come out very delicious, one thing i didnt knew that rice flour dont expand like cakes do so I divided my batter into two and that makes the layer much thinner. leason learned. otherwise taste was so good. i will be making 3 batches this week for my Ramadan iftar party. mochi is something new for my south asian frnds and family : )
      although we do use rice flour but for different recipe.

    Thanks for the recipe, really easy to follow and the texture is so good. One thing, is it supposed to have an eggy aftertaste? This is the second recipe I've tried. This one is less eggy than the other but it's still noticeable.

    Hi Gemma, I made this yesterday, but it didn’t look the way yours did. Mine has a stickier texture, but still tastes good. I wonder if it’s because I substituted the whole milk with oat milk due to allergies. I baked it for 65 minutes.

      It might be that. Milk when cooked with sugar thickens, while dairy free milk would have a higher water content. I hope you enjoyed it though. Thanks for sharing.
