SALTED PORK MASALA With SANNAS. Traditionally Goans/ Mangalorean Style

  • SALTED PORK MASALA
    Pork Salted & Cooked in masala Traditional Goans/ Mangalorean method.
    In olden time there was no proper Refrigeration & our Ancestor preserve the Pork meat using this old method. Pork meat pieces Salted, cured, preserved & kept it for a long period & using & cooking as they like.
    ● Ingredients:
    * A.
    ▪︎Pork 2kgs
    ▪︎Pork Meat shoulder pieces
    ▪︎Pork Belly Pieces
    ▪︎Pork leg meat pieces
    ▪︎Sufficient Salt to preserve
    * B.
    For Masala:
    * 20 nos Kashmiri Red
    chillies
    * 10 Bydgi chillies
    * 2tbsp Coriander seeds
    * 1tsp Cumin seeds
    * 1tsp Peppercorns
    * 1/4mustard seeds
    * 1tsp Turmeric powder
    * 15 Cloves
    * 2" Cinnamon sticks
    * Small pc Javethri
    ▪︎Optional: 2Elichi, small Nutmeg pc, small pc Star Anise, very little soump etc.
    * C.
    Dry roast above spices for 2-3mins slightly & grind into smooth paste with below mentioned D Ingredients 2no Onions, 10Garlic cloves, 1/2"Ginger,1/4 cup Vinegar. Or you can powder it & use it.
    * D:To grind with above
    •2 nos Onions
    •1/2" Ginger
    •10 Garlic Cloves
    •1/4 cupVinegar
    * E. Seasoning:
    ° 2 Lemon size Tamrind pulp
    ° 4 nos Onions
    ° 2 Pods Garlic
    ° 2" Ginger
    ° Bay leaves
    ° Little Oil
    ● Method:
    1. In a Vessel or Earthen pot keep Big pieces of Pork meat, layer it with salt mix it and quote nicly on all pieces of meat. Refrigerated it for 3-4 days (Or 1week or more days & preserve it.)
    2. Remove meat from Refrigerator & put it in water, wash it several times 5-6 times to clean the excess Salt in it.
    3. Cut into desired pieces & soak it in water before you start to cooking. Drain squeeze all the water from meat & keep it aside apply little Turmeric & Tamarind pulp.
    4. Take a broad big deep Pan or Vessel add 2tbsp oil,add Onions fry slightly soft, add Ginger, Bay leaves, Garlic saute little. Add meat and let it roast in it little while. Do not close lid stir it & cook it till it release its all water & roasted.
    5. Now add Powder masala or grounded masala in it stir it well, cover lid & cook it on slow flame for 10mins. Add very little masala water, stir mix it well. Do not add more water, if need add little hot water.
    6. Close lid & cook it for 30mins or till done. Taste the masala & salt. If required more add depend upon your taste. Since we salted Pork, no need to add salt it's enough absorbed one.
    7. Check everything is perfect. Turn off the flame. Set aside to absorb masala. Serve it with Sannas, Idlis, Pav, or Rice.
    If you like it, then prepare this salted Pork once in a while & enjoy it with your family and friends.
