Zener diode makes use of Zener breakdown. So you use it in the "wrong" direction. When the voltage on it gets to a set Zener voltage, it won't get higher anymore. So as long as you have a high enough voltage, the Zener will give you an almost perfectly stable voltage.
It's very useful in power supplies for sensitive electronics such as 74 TTLs which require nearly exactly 5V to function.
You'll typically find them inside voltage regulators such as the 78xx series.
