    Superb!🤗 My grandmother gave me a cookbook by her and her church sisters, years ago so now I can make the pecan pie recipe. Do you think that granulated swerve or splenda for baking will also work? Also for your waffle recipe, should we go ahead and add 3 tbsp of baking powder to the perfected flour inorder to make those? Thank again!🤩

    • @redhatpat9387
      @redhatpat9387 ปีที่แล้ว

      Granulated Swerve is an erythritol based sweetener. Some people experience a "cooling" effect on their taste buds from using it, others not so much. Using it as a DRY sugar in recipes shouldn't make too much of a difference as far as texture goes. HOWEVER, turning it into a syrup is problematic as it tends to recrystalize as it cools and it gains a "grainy" texture so it is not a good choice for making flavored syrups.
      When using allulose for baking you have to realize/remember that it "browns like sugar," but a lot faster than sugar does. I think that is why she tends to use a (homemade) mixture of half allulose and half erythritol.

  • @eileenpetri6053
    @eileenpetri6053 ปีที่แล้ว +1

    I always swap allulose in recipes with Bocha Sweet (my body won't do allulose), usually it works just fine. Could you indicate granulated vs powdered when referring to your sweetener instead of regular? It would help. I assume you mean granulated but it's hard to tell. Thankyou so much for the flour recipes, they are divine. So happy to have found you.

    With your liquid allulose, can you add lemon juice and cream if tartar, heating it to thicken? That might make it more like your corn syrup, which I'm excited about and want to try!

    • @victoriasketokitchen
      @victoriasketokitchen  ปีที่แล้ว +2

      It doesn’t have as much allulose in it as the the corn syrup so it won’t get as thick unless you boil it down about half of its amount

      @@victoriasketokitchen Victoria, thank you for replying to this inquiry. I have several large bottles of liquid allulose that I purchased at an outlet store a while back and I was wondering about converting them to your recipe. I guess I could, if I wanted to- now that I have that information. I have also been buying bags of "Splenda" Allulose (also at a discount store) and it is good to know that I can make "corn syrup" AND honey out of them too. BTW - I have a bottle of "corn extract" that I purchased to use in a keto cornbread recipe to give it that missing flavor. Do you think that adding a drop or two to this recipe would make it taste any better?

    • @redhatpat9387
      @redhatpat9387 ปีที่แล้ว +1

      I tried this today with the Liquid Allulose I purchased (on sale) a few months ago. Instead of boiling it down to thicken it up as Victoria mentioned, I added 1/2 cup of granulated Allulose to the liquid allulose and then the Cream of Tartar and the lemon juice and simmered it for 20 mins. It got VERY thick so I opted to add 1/2 cup of water to thin it out and simmered it again for 20 mins. It came out just like the version not using the liquid allulose. 😋 (Perhaps it is due to the brand of liquid allulose I used which was "Wholesum" (by WholesomeSweet), and believe me, I did not pay $10/bottle back when I found it!

    This looks great, i want to make butter tarts, do i use your new flour mix to substitute for the crust in a regular recipe?

    Victoria I am wondering if citric acid powder would work instead of lemon juice so you don’t get a lemon flavor? I also am wondering if you have ever made hard candy? I would use corn syrup in making our cinnamon glass candy every Christmas and I’m wondering if this would work?

    Ooooh its a honey consistency! I bet you could use that for a honey substitute too!

    I wonder if this would work with monk fruit or Erythritol? I made the shortcut ice cream with allulose and whipped cream and pecans. At one tablespoon and withing an hour explosive gas and diarrhea! ☺I know TMI..... but I'm going to try with erythritol, the addition of lemon juice and cream of tartar. Trying to make gummies ..... can't get texture right.... think it is missing corn syrup, also pectin

    I want to try to do this recipe with erythritol since allulose is not legal yet here, in Europe.

      She has replied several times in other comments (AND on the recipe page) that erythritol will not work because it will crystalize. :(

    Have you tried adding corn flavoring? I found an artificial corn extract to use when making keto corn bread. I just wonder if that might be a nice flavor to add.

    I can’t wait to try to make my own keto corn syrup. How long can you store the syrup? Thank you for sharing.

    Can you use granulated or powdered Swerve? I live in Ecuador and I always have to import ingredients so I don't want to have to import another ingredient that I don't necessarily need.

      Erythritol is the main ingredient in Swerve so it will re crystalize so unfortunately no

    May I ask, do you think this keto corn syrup would work in a recipe for keto peanut (or other nut) brittle?

    Allulose not available in South Africa 😢. We only get Xylitol, Erythritol and Stevia.
