  • Gỏi khô bò served up on the back of a motor bike. For over 20 years this gỏi khô bò has been served up by a lady and her family. A single plate of it cost just $1 and due to this stalls popularity the owner was able to not only employ her family, but she was also able to send her son to college in the USA.
    We went early this day to try the dish our self and try to learn the history of this certain stall. We later came back at night to eat more Gỏi khô bò and talk with the locals and try and figure out what they loved about it so much.
    And the common theme? The SAUCE! It just shows that delicious food can truly bring us all together.

    Hey everybody!!! So this was a type of video we wanted to try where we deep dived what makes a certain stall so loved! We changed it up by interviewing people and seeing what it is they love about this gỏi khô bò.

      I do believe this video is more fun than the previous one where you were basically having a dialogue with one local and where you seemed much more reserved. I do believe that documentaries require more research, and better camera and audio work. In all cases, I still enjoy your videos and I hope you will find the format that works best for your style the soonest.

    Oh well, I have faith in you Max...still hanging here, trying hard to adapt from your old videos to this new format...I must admit, at first, felt a bit awkward, but slowly I can get use to it now...this video improved a lot better than those previous ones I must say...keep up the good work 👏💪

    I like this type of video where the locals get involved. I do prefer the old style but I like the change as it’s interesting and more of a documentary.

It looks like you're still trying to find the balance between the new and old styles, but I like where you're going with this.     To make the sauces is pretty easy.
    First you need 1/2 cup of fish sauces, 200ml fresh coconut juices mix together until thickened then add 45 grams of salts, 3 tablespoons of sugars, 2 tablespoons of msg and 2 tablespoons of paprika. Mix them up then add 200ml of boiling hot oils.
    Best to eat with papaya salad and congees.

    Last time I was in VN we bought the whole cart of papaya salad from this gentleman who’s been selling it way back when. His sauce was tangy and just the best!! But this looks good too haha

    "Every thing is a little sweet here." You're so right about that! I have a few Vietnamese friends here in Sherwood & Little Rock, and my nephew-in-law is also Vietnamese. When they cook for a party, the hot pot with taro roots is my most favorite, and the shredded papaya with beef jerky is my least favorite, for the simple fact that it's too sweet for me. I'd rather have Som Tum.

      It actually depends on where they come from within Vietnamese. Usually it's a bit saultier for Northern pp, spicier for Central pp and sweeter for Southern pp. Even in the South, people from other places like different levels of sweetness.

      Are you sure it is Vietnamese version? Cause I had a chance to try Thai version and Lao version. Thai papaya is sweeter, Lao is a little spicy and Vietnamese version is light.....😜😜

    Not here ! Gỏi khô bò ông Năm at Nguyễn văn Thủ street mới ngon và đầu tiên ở SG sau năm 75 ,hiện giờ con gái ông ấy bán vì ông ấy đã già yếu ! Gần ngã tư Đinh tiên Hoàng - Ng v Thủ !

    Hi max no related to this video. Question there was video where you had a meal with leo at a restaurant where you persuaded to try the dry noodle. Whst was the name of that dish but more importantly there were two sauces a jug of mashed garlic and the other not do sure. What were names of those sauces? Thanks in advance. Enjoying your videos.

    That papaya salad does look really good...but I bet that sauce is way sweeter than it should be. I'm not a fan of how much sugar is used in southern cooking. I think a little is okay to enhance and complement the flavor, but sometimes they go way overboard. Some things don't need to be THAT sweet. And some things should remain on the savory/sour side. :)

    There was a place that I hope still exist for a reason later, that also offer good green pawpaw shredded salad with jerky beef: Bà Huyện Thanh Quan st. District 3, next to the greatest (by pop) Girl Hi School Nguyễn Thị Minh Khai & Temple (Chùa) Xá Lợi. If those carts still there try some Bò Bía (Chinese version spring rolls) & pearl/burble tea (Đậu Đỏ Bánh Lọt = Red bean & tapioca) not necessary red bean, it's your pick.
    The reason I believe they're still around for that Girl Hi School is crowed & the teenagers love snacks. Many boys just waiting outside for the girls knock off their schooling sessions. That T junction was & would still be a hot rendezvous hot spot.
    When your're there, have a look at the big French Architecture blds of the Girl Hi School Nguyễn Thị Minh Khai. Its name was Gia Long but that Ffrecking King was a traitor who invited French missionary accompanied by Expeditionary Force invaded VN. After 1975 the gov named it as now after a revolutionary heroes who died at the Colonial French soon after her husband the 1st Secretary Gen Tran Phu.
    Gia Long Girl Hi School was 1 of 2 most prestigious Hi School for girl before 1975. Another prestigious was Trưng Vưong in Nguyễn Bỉnh Khiêm st. D.1 across the rd from the Zoo also offered the same snacks back then 1975.
