Yes, Cocoa powder and chocolate is a popular ingredient in most chili recipes. It tastes great! I know. My award-winning Texas Red recipe has dark chocolate in it! I know all about this. Stop leaving me this comment. TB uses less than 2 grams of cocoa powder in this recipe. That is not enough to taste. That is what I was talking about!
About 7 months ago I made a video about the Taco Bell Chilito (aka Chili Cheese Burrito) and it was delicious. Unfortunately, it was wrong. Yes, I screwed up and I admit it. There are no beans in a Chilito and never were. I am sorry! I went about trying to recreate the REAL recipe for their Chili Cheese Burrito and I have one I think nails it. Follow along as I make the Chilito, the right way! Enjoy!
Chilito Recipe:
1 lb. Gound beef
Dry Spice Ingredients:
2 tsp Chili Powder
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Paprika
1/2 tsp Cayanne Pepper
1/2 tsp Cumin
1/32 tsp Cocoa Powder
1 tsp Salt
1 tsp MSG
1 tsp ground Black Pepper
Thickeners
2 tbsp AP Flour
1 tbsp Oat Flour (ground from instant oats is fine)
Liquids:
1 1/2 Cups of water
2 tbsp Tomato Paste
1 tsp Lime Juice
Add Cheese, some Taco Bell Taco Sauce and a soft Flour tortilla to assemble

I live in Ohio where the chili cheese burrito is still available, I have been using the taco seasoning plus enchilada sauce recipe from your last video, omitting the beans. I add cornstarch as a thickener. The flavor is spot on. One thing you are missing is the final step…..steaming the burrito to melt all the cheese and chili together and soften the tortilla. We use a steamer lid in the microwave for 45 seconds. They are perfect. I can’t wait to try this new recipe. There are so many videos out there that are nothing like the real thing. Thank you!

Steaming is absolutely critical. The original was steamed in the same stream tray they used for meximelt
@@penuts17 I remember the meximelt. They weren't bad, but I always considered them a disappointment after I accidentally ordered them instead of the chili cheese.

This recipe does look great. I’m curious though if this comes out with the chili beef taste and not just taco beef flavoring? I distinctly remember the chilito having a chili flavor so I’m wondering since you mentioned just using taco meat seasoning?
Ok EDIT. We made these today with this recipe and they were pretty great for sure! My only critique is it didn’t have enough chili flavor, so I’m thinking maybe more chili power or cumin too? Not sure.
If you want a beefier flavor you can substitute some beef stock for the water. I would not go 100% beef stock right away. Maybe 50/50 and see how it tastes to you.
If your chili powder is not fresh it will lose a bit of its zing. Ancho Chili Powder has a massive amount of flavor and can be used in place of the chili powder completely. It's not too spicy, just a great earthy flavor. Thanks for your comments. I love the feedback!
Watched Johnny tb chilito video n he did use more chilli powder then this guy did but he used beans but idk ppl were commenting saying it was copycat more cumin is also needed and you have it nailed!
They sell them still about 20 minutes from my house. They are $5 each...

Taco Bell Chilito has never had beans. Not before or after the name change.

First off, the employees have no idea what is in the food. We get big packages of stuff that says "ground beef seasoning" and you add that to the meat. They do not trust anyone with these recipes. Second, I was there ten years before this thing came out. I'm having to use my cheffy ways to figure these things out. It's actually a lot of fun doing the research to come with these recipes. Chocolate, actually, is in a lot of Mexican and South American Dishes. It isn't solo for coloring. Chocolate powder with meat is a fantastic taste enhancement. I use it for my ox tail, roast pork, chicken, and beef. It works great with spices, changing it into being more melded together. It is a great alternative to those of us who cannot have tomatoes or if you are out of them. I've used it in beef stews and goulash for decades since learning from a Hungarian who put it in when he learned my father was allergic to tomatoes. It is a great thickener too.
The real, actual recipe from the 1990s, this is how they actually made it back then. They took their taco meat, added packaged chili seasoning, and water and simmered it to reduce. That's it. No complicated recipes or anything although I'm sure homemade tastes way better. But that's it, basically make chili but use taco meat instead of plain ground beef.
I worked at Taco Bell 85-87 the Chilito sauce looks and taste like the Mild Sauce packet. I made the Chilito everyday and I ate it everyday I hate they discontinued it. A ladle sauce then a little cheese then steam. I add sour cream after its steamed.

The Chilito is still on the menu in some states. If your taco bell used to be a Zantingo's it still has the chilito. Ohio, Michigan and a couple other states have it.

Cocoa might be the 'Active Ingredient' -- the seemingly innocent, out-of-place one that SETS IT OFF!
Pretty dang sure there is cocoa in Bojangle's sweet tea ( the legit Southeast fried chicken chain ) AND in Skyline Chili's recipe ( the Midwest 5-way chili chain ). And a few other yummy dishes we can't figure out why it's so GOOD!
So ... I'm definitely gonna INCLUDE the cocoa!
This redo was great. Nice PSA about the Taco Bell branded Taco Seasoning. I remember your video adding the beans. I was one of the comentors that mentioned No Refried Beans in a Chilito. It is a good ingredient to add, but it won't be a Taco Bell Chili Cheese Burrito. Legal issues caused them to rename it as a Chili Cheese Burrito.
I agree with other comentors that the cheese needs to be more melted to get the Taco Bell consistency. Some "copy cat" versions add cheese to the chili mixture and add more when assembling.
One thing I do when trying to "copy cat" a recipe is if I can't pronounce an ingredient, I don't worry about it. MSG i can pronounce but I don't use it even though it is easily available at grocers. I am sure my "copy cat" does not taste like the original but it is still good and maybe better than the original.
The Oat Flour as part of the thickening ingredients was interesting. I've not seen that before. But easy to make at home if you have a spice grinder or Coffee Bean grinder.
There has to be a way to get the canned chili taste. What is the flavor? Its not just salty!

This recipe is money! The closest taco bell that still sells this is out of state in Ohio nearly two hours away (I'm in SE Michigan). The nearest in state taco bell that sells this is nearly 4 hours away in northern Michigan. You sir are a God send!

you are wrong, yet again, about that cocoa being added for color, as there are many award winning Southwest and Tex~Mex Chili Contests 'Won' With The Cocoa Added...
Geez, why so agressive? They use a tiny amount that no one could ever taste so that can't be the reason. The only other logical reason is tradition or color. TB doesn't strike as a stickler for tradition. BTW, my own personal award winning Texas Red recipe from over 20 years ago has chocolate in it so yes, I know all about cocoa in chili. Everyone knows about that.
Sorry but, the Chili Cheese Burrito was a Zantigo menu item that PepsiCo kept after they bought the chain.
I know... why are you sorry? I went over that in the original video. Zanitgo locations still have it on the menu today.
I'd recommend a pinch of citric acid instead of lime juice. It will raise that acidity and give it the tang, but won't have the flavor of lime...which chili cheese burritos don't.
Very true BUT most people don't have citric acid laying around and the lime juice is VERY close in flavor to their seasoning. I have done it both ways and I can't really tell the difference. Besides, lime is a very common mexican cuisine flavor so the only sin is making it taste TOO good!

You should steam it at the end so it closes up like the original did.
Instead of malic acid you could use a touch of lime. All malic acid is, is sour. Not sure if a little bit of lime would change the flavor too much though.
Absolutely. I have been using that trick for years now. It is kind of the signature Taco Bell flavor. That and Torula Yeast but we won't get into that. Thanks for the comment!

I KNEW I was right! When I was growing up, everyone tried to convince me Taco Bell's Chilito had beans,
but I knew they didn't (I'm a picky eater who's hyper-sensitive about certain textures, I would have known)
I followed your last recipe for Chilitos and it turned out great. I made about ten of them and froze some and they microwaved up great later. Gonna have to try it now without the beans. But since I know they're bound to turn out so damn good maybe I'll make a double batch, half with beans, half without. And freeze a bunch for later, too. Much better than the store-bought frozen burritos. 👍🍻🍻🍻

I add cocoa to my chili recipe ( so does Skyline Chili, btw.) It adds a richness to the flavor, I don't think it has anything to do with color.

They usually put onions in it.
That is what I thought too but they never put onions in it. They still sell them in the midwest and you can look up the ingredients still. No onions.
I'm gonna be makin these fo sho...lol everytime i visit cincinnati I make sure to go to taco bell 🔔 😋 glad i found the recipe cause I've tried in the past and your right those seasoning packets at the store are not the same

I commented on your last video about the beans not being in the chili. However, there was a menu item that we did have a mixture of seasoned beef (taco meat), beans, and red sauce. It was way back in the late 80s and for a limited time. It was put into the taco bell grande taco shell. I don’t recall the actual name, but remember making those for a little while when I worked there back then.

@@howtocooke that’s what it was called?? 😂 I remember when the Meximelt came out. We were making tons of them preparing for our visit from Taco Bell’s president and CEO at the time (can’t remember his name) That was a fun time in life for me.

OK, when you said the CEO was coming it gave me flashbacks. Every lunch it seemed like the whole corporate office would come in at the same time and expect to get fed in 3 mintues. Our manager, Clyde, was a basket case at11:45am everyday, waiting for the crowd of suits to hit the door. Fun times!
Just tried this recipe. I'll give it a 9 out of 10. I will skip the lime juice next time. I can't tell if he added it to ensure the authentic flavor or to kick it up, meaning customize to his taste. The lime changed the flavor in my opinion.
They use Citric Acid in their recipe. That is not a very common thing for people to have around the house so I subbed in lime juice. It does have a slightly different flavor and kudos for picking that up. You can buy Citric Acid on Amazon if you want a more accurate flavor. Just use a tiny amount though. It's really potent!

I'm goibg to disagree on the coco powder. Even a little deepens the flavor. It's unami.... cinci chili specialist here.

where are you getting oat flower from? I checked the website and these are the ingredients: Chili (Regional): Seasoned beef*, water, chili seasoning (enriched wheat flour, spices, modified food starch, salt, paprika (VC), maltodextrin, tomato powder (contain soy and wheat), dried onion, garlic powder, sodium alginate, malic acid, monocalcium phosphate). Contains: Wheat, Soy. *See Seasoned Beef ingredient statement,
I am using the oat flour (just ground up oatmeal) in place of the sodium alginate as a thickener.
I’m in Alaska and always ask for the chilito on the off chance it’s available. It never is. Grew up in Southern California and the chilito was our go to struggle meal after spending all day long at the beach. It helped the bus dropped us off right out side of Taco Bell.
Ah, the old beach bus.... I used to take the bus from Tustin to Newport Beach about 3 times a week every summer. The good old days... So much fun getting on a bus with a surf board. There was a rack in front you would put the board and HOPE it was still there when you got off.
Thanks for doing you videos. I loved Chili Cheese burritos! It was go to lunch every day when I was working across the street from a Taco Bell. And was sad when they got rid of them. 20 some years later …. I am now working for Taco Bell part time. And ask all the time to bring them back! Lol But the reason for my post … I tried both of you recipes (beans/no beans) and I think you nailed it in both! I like the bean version better just because it adds more protein. But KUDOS to you … I now make these several times a week!

I wish they would bring it back too but I hear they are $4 and shrunk to 2 bites (or so) where they are still available so maybe making our own isn't such a bad idea anyways. BYW, this chili is amazing on chili dogs too.

Excellent point. I like the beans personally but they are both really good and taste like a Chilito. Being that this is TH-cam, many people are VERY adamant that things be done exactly correctly so I thought I'd better fix this before I get run off the internet.
You can microwave tortillas in between moist layers of paper towel. This steams them. They come out nice and flexible.
Very true, but I'll wait to do that until I see my cousins from mexico do it first. They are REALLY against microwaving tortillas. Maybe they are just pulling my leg and do it all the time in private.... I bet they do
Another Winner.........you are the TB expert. I dont suppose you have a recipe for the Taco Bell Bean Burrito red sauce.
The "red" sauce is just red enchilada sauce. The Hatch brand is my personal favorite and is extremely close to theirs. Just heat it up like taco bell does. Makes a world of difference.

The cheese is actually separate from the chili. It just melts in as it sits in the bag with the rest of the food. This is one case where the drive-thru actually makes it better...
I'm lucky to live in a state where I can still order/get a chili cheese burrito from Taco Bell, but the frequent price increases are ridiculous -- so I'm happy to have found your channel and recipe. I just made it and the flavor is totally there, but I need to work on steaming the tortilla to really mimic TB. This recipe is a keeper! (And to think for YEARS I would heat a can of Hormel Chili w/o beans and add a packet of taco seasoning (to taste) as my copycat version, ha.) This is SO MUCH better! Thank you!

I went to go get these Items.and everbody I talk to said don't use msg.its bad for stomach. Why would they want you to put that in a Burrito one of the store clerks asks.?
That is mostly an old wive's tale. A small number of people have an intolerance to msg and will have cramps and bloating, but it is pretty rare actually. For 99% of people it is fine. If you don't want to use it just double the salt amount. That will taste just fine

Mexican Mole' sauces usually contain chocolate I'm assuming that was also the reason for the cocoa in the Chilito
Very true about chocolate in mole but I think you are giving Taco Bell WAY too much credit. It's just there for color...

You’re really close. A chilito once it was wrapped would be steamed. A little steam to get the tortilla softer and the cheese melty would put this recipe to a 10.
That makes sense. Steaming is the one thing that is tricky to do at home. I'm still trying to find an easy way to do it.
@@howtocookeFrying pan heated up, place the chilito in the pan a little water on each side and cover. It’s the method I use for reheating pizza. I haven’t tried it with a chilito yet, but I’d imagine this would be a good way.
I steam my torts over boiling water.
That is a great way to heat them without ruining them. Never microwave your tortillas people!

Boil the ground beef
I only boil pasta and hard boiled eggs. Everything else gets cooked.
There is no right or wrong in Mexican food , it's all delicious. Both recipes were good but I admire your dedication to getting it true to the original. I can copy most anything on their menu, I have to, it's gotten so expensive I can't afford it anymore.

I had been using the recipe with beans that I got from the other top search result, and although it is pretty good, it's definitely not spot-on. I'm excited to try your recipe tonight and I'm glad I decided to search it up again before cooking. The only bummer is that I cannot get Accent in Canada, so I'll have to omit that for now until I find a source for it
Any brand of mono sodium glutamate would work. I was just using Accent as it's readily available for me locally.
