My Shredded Beef Enchiladas

I know this video has a few holes in it. GoPro cameras do not like heat and I lost about 5 minutes of filming while cooking the meat. What you did not see was the 2 - 4 cups of beef stock, 1 actual bay leaf, 1 tbsp of Worcestershire sauce, Roast Seasoning mix and 1 tbsp Apple Cider Vinegar go in after you add the meat back to the pot. Give it a stir, put the lid on it and bring it to a simmer before putting the pot in the oven. Cook at 250f for 2 hours, take the pot out and flip the meat over. Cook another 1 1/2 hours covered and then take the cover off for the last 30 minutes. Baste the roast and let it rest for 30-40 minutes after you take it out of the oven and you're all set!
Roast Seasoning Mix
1 tsp Cumin
1 tsp Salt
1 tsp Black Pepper
1 tsp Mexican Oregano
Roast Dry Rub Mix
1 tsp Chili Powder
1 tsp Granulated Garlic
1 tsp Onion Powder
1 tsp Paprika
1 tsp Salt

    Just tried this recipe. I'll give it a 9 out of 10. I will skip the lime juice next time. I can't tell if he added it to ensure the authentic flavor or to kick it up, meaning customize to his taste. The lime changed the flavor in my opinion.

      They use Citric Acid in their recipe. That is not a very common thing for people to have around the house so I subbed in lime juice. It does have a slightly different flavor and kudos for picking that up. You can buy Citric Acid on Amazon if you want a more accurate flavor. Just use a tiny amount though. It's really potent!

      It went back on the stove on low until it started to simmer. Give it a stir and let it heat another 10min or so and then it's ready to use.

    I watched a video of Tommy's chili last night and that recipe was made a little different. They had a jalapeño that was also chopped up fine with the carrot. Theirs had different seasonings and barley flour. The flour was also toasted in a dry pan before mixing with water. And left to simmer for an hour stirring occasionally. No wait time for eating. He said that recipe was the closest to Tommy's that he has tried.

      Tommy's stopped making their own chili several years ago. There is an "original" recipe and the new recipe. I was trying to recreate the original from the 1940s and '50s. That was greek chili and had very little Latin influence. The modern chili has a ton of Latin ingredients.

    I'm the 80s Track Bell had a different chicken soft taco recipe. It had little to no chili powder & paprika in it. I LOVED it. Does anyone know THAT recipe? No offense to the chef, but I've been trying to find it everywhere... thanks y'all (chef included!)

      That was basically just salt and pepper and throw on a charbroiler as I recall. I could be wrong but they kept it really simple in those days. Also, teriyaki was crazy popular. Could that have been it?

    I added half a teaspoon of MSG to the white sauce on the 2nd try and it made my mouth water. It's perfection. Added just a fast circle squirt of mustard over the top side lid over the white sauce, just before I cap the patty on the grill with it. Same taste I remember, even without the jack cheese. Going to try an Ortega burger next. Thanks!

    My first job was Taco Bell and they had an item called the Bell Burger. It was awesome and I really do miss it. I am 71 years old now and I was 16 years old when I worked there. Wish they would bring it back. I don’t eat there anymore because they make crap I don’t like.

      I love those things! They changed the name to the bell beefer after they got sued by the burger mafia. I ate the last 3 they had at the store I worked at when they discontinued it. I made a video about it a while ago.

      Steel will generally cost more but they last forever. Stone is more prone to breaking so that is a factor as well.

      You can go to the del taco website and see the list of ingredients. Mayo, salt, sugar, buttermilk, no citric acids or malic acid. I promise! I wouldn't do you like that...😉

    There is simply no debate...I make pizza weekly, and have for 20 years...in a home oven, gotta use steel...I have a wood fired oven too and that is only for my neopolitan pizzas and that, at 900degrees has a stone deck.

    Hi From were have you got that idiotic idea to have suger in the pancake batter . NO NO NO no suger and one tsp salt at max. 2-3 eggs. 5 dl milk and 4 dl flower plus 1 dl in reserv if the batter gone thin. NO butter either. The only butter you should have is to use in the pan. suger is extra for foriger that must have suger in all things. Dont stand and learn people fault.. i go crazy when i see all these chefs talk wrong on swedich recepies.

      I am so sorry. That is the recipe I got from my swedish neighbor 40 years ago. She said it was her mom's recipe. She was born and raised in Sweden, so I assumed it was authentic. Never trust a swedish woman named Lupe Gonzales!

But when you sitt and read recepi after recepie from chefs all over the world and there is hundreds of adjustments and all of them sais they got the original and so is the sweds doing. About suger , yes suger was and is expensive. Its used as a treatment often. Americans use suger in everything and lots of it .Sweds nja not so much. Im impressed you dont call our pancakes creps and you are the first and only in the world that have the right pans. Plättlagg and pancake pan in cast iron . The problem with such pans are that they could leak in the bottom because of the cast tecniqe. Tell your mother in law that its a okey recepi but not original. I think pancakes are at least as old as meetballs. If you tilt the pan 15 degreese and pore the batter on the handle side it will fill out the pan to a round nice cake. Mvh.kj

    For me it is just not the same with standard enchilada sauce. Taco Bell's Red Sauce isn't regular enchilada sauce (they put it the burritos too) and for the Enchirito it's the main thing. Can you figure out that recipe? I haven't found one and watched several videos saying theirs is right but they aren't.

      90% of canned red enchilada sauces are not correct for the Taco Bell Red Sauce. The Hatch brand is the closest I have found to the taco bell red sauce but it is still a bit too much chili forward from their sauce. I did a video on my other channel about a tomato based red enchilada sauce that my wife swears is the exact Enchirito sauce. It's really good and super easy to make.     Instead of malic acid you could use a touch of lime. All malic acid is, is sour. Not sure if a little bit of lime would change the flavor too much though.

      Absolutely. I have been using that trick for years now. It is kind of the signature Taco Bell flavor. That and Torula Yeast but we won't get into that. Thanks for the comment!

    Looks great, congrats on hitting 4K subs. You had about 1.3k when I joined, amazed at the growth. You have obviously found your niche.       Thanks for being here from pretty much the start. Besides Taco Bell (does not count at all!) I haven't cooked in a restaurant. I was a busboy/dishwasher for about a month at a mexican restaurant. Being the only white kid in the place was rough. They apparently did not know or care that part of my family was from mexico... Seeing how hard those guys worked scared off a 17 year old me. Since then I have just been studying as much as I can about cooking. I'm glad you like the recipes!

      Thanks. One year ago, exactly since it hit 1000. 3k more this year, 1 million next year! I don't generally like slaw either but on this sandwich it's a must! That spicy kick makes it awesome!

    Yum! A great sandwich for a milestone. I am curious, though, do you have an opinion on subbing Miracle Whip for Mayo in that slaw?

      I was raised on miracle whip. I have not had it in about 20 years... That being said, it's awesome for slaw! It has that little kick. Good call

    I worked at Naugles in 1980-82, there was no white sauce it was just mayo. It was mayo in the mex salad also.

      Thanks for the first hand info. Bill Naugle sold all the recipes to the new guy running the place and there was a white sauce included. They use it with their new version of the naugleburger. Maybe different restaurants used different ingredients? Plus, this white sauce is awesome!

    Loved the Red Sauce Recipe! My family had multiple Big Boys throughout Indiana and Colorado. The Azar Big Boy was an original franchise spun off the original Frisch. I am creating an whole series of Azar family restaurant recipes and we are filming Big Boy, Onion Rings and Strawberry pie this weekend. Your recipe for the red sauce is spot on. I have all the original recipes from our family restaurants, but we never had the red sauce. Nice work and I am going to subscribe!

      I would be keeping a close eye on it after the 4 minute mark. Under 5 max would be my guess. At 290c it's 7 minutes almost exactly. If you see cheese browning, pull it out!

      They made this salad up to the mid/late 90s or so. It was very real, I can assure you.
