My mother-in-law told me years ago when she was teaching me to make jams and jelly to add a teaspoon of butter to the pot to reduce foam and to butter the rim of the pot to keep the jam/jelly from boiling over if you turned your back for a second.
When I was at my small towns grocery store yesterday, the checker and I were talking about my purple/red fingers. I had just spent four hours picking wild blackberries. She then exclaimed she had to show me what a customer had given her the day before. She took a pint jar from under the counter and it was a jar of strawberry zucchini jam. It was such a pretty color! A light color and so lovely. She and I had never heard of zucchini jam before, so I am happy to see this video and recipe! Thank you!
love growing zucchini because you can do so much with it. I made shredded mock pineapple, mock applesauce, mock apple crisp, and yes mock crab cakes which I found recipe on internet. Oh, wait I made chocolate zucchini pudding today.

Made some today. Great way to use zucchini. I used a low sugar pectin and a little less than half of the sugar (2.5 cups for double batch). Tastes great and plenty sweet. Thanks for sharing!

Making a triple batch of Zucchini Sweet Relish and canning it today, then just small shredded enough zucc. for a double batch of this soon. I also don't have any apple juice, but pineapple juice to substitute just like yours. Some I can give as jars at Christmas time in gifts at the shop my husband works at. That is where the zucchini came from. One of the guys has a lovely garden and brought in 3 large zucchini's that "hid" from him and got huge. Thanks for sharing this recipe.
I LOVE how you think about revamping or dreaming up ideas to use foods! I do the same and just yesterday I noticed I had jalapenos that needed to be used and a couple cups of pineapple juice still left over from my canning your pineapple zucchini video....so I thought...hmmmm.....I am going to blend the jalapenos with the pineapple juice and....and....and I just couldn't put my finger on what to do with it....if I should freeze it or make something...I knew there was something....well here it is!!! This video came up for me to watch and PERFECT! I am going to use zucchini and my my blending jalapenos to make this jam! OH MAN....that should be amazing!!! OH and I thought "ice cream"....put Ice Cream on that cake you planned on making with this jam! :) Thanks!
I made some Carrot Cake Jam & it's AMAZING on toast. It sounds similar to your jam. I'm sure you've heard of it & probably have made it before. If you haven't I got the Recipe from Linda's Pantry here on TH-cam & I doubled it. So I have tons of jam. Everyone that I've given it to absolutely LOVES it & they eat it straight out the jar. Lol It's that Good!!! 😋 😁
Omg I just made this and if you use the apple juice it tastes exactly like apple pie. I didn’t have nutmeg so I substituted with pumpkin pie spice. Amazing I’m still licking the spoon off lol.
Looks great! Thank you for sharing. The trick to not have foam in the jam is a Tsp of butter right at that point. The fat in the butter will make the foam disappear. I would love to try that, even though we are no jam family, just because it’s zucchini!

I thought this would be so easy. I have made two batches following the recipe and neither batch has set. I am no beginner to canning and making jam, I couldn’t tell you the last time I had a batch fail. I don’t think I’m going to try a third time but it does look good.

I made it. For some reason I thought the recipe asked for 1 cup of raisins. So that's what I did plus I doubled it. I put the raisins in first and then all my shredded zucchini so I had had way more raisins then I needed. I wasn't going to remove some so I just left them. I also didn't have apple juice but I had applesauce so I just used 1c of apple sauce and 1c of water and mixed it in my vitamaster. It made thick apple juice. I then reduced the sugar because of the raisins. So I put 4c of sugar instead of 6c. It is still very delicious even though I messed up the recipe. Next time I will pay closer attention. haha

Since it has been a couple of years, is this amazing, or drop it? We don't do much jam and the onion jam is one I really want to try. We literally are orange marmalade people and stick to our fav. But it does sound yummy!! Thanks for the honesty.
If you add a half teaspoon of butter to your pot, then you won't have so much foam. It is in the pectin box directions, and it seems to work for me. Then, I just remove the little bit of foam, if there is any, with a sheet of wax paper. (Lay on top of jam and peel off.) I've made zucchini bread jam before, and it is really decadent. I will try this new recipe. You can also make carrot cake jam, which is delicious, too. Thanks for sharing this new channel with us. I will have to check her out! :)

Made the recipe! I don’t know if I love it or not. But it’s really nice, and it’s interesting. For reference for anyone who wonders if they’d like it, I am madly in love with mincemeat pie, I love raisins, I love cinnamon, I like but don’t love zucchini bread. It’s good, but I’d rather have pumpkin bread or apple spice bread. The extra 1/3 cup or so from the pot is now room temp and is a little loose. I know they can set up over time. But so far it’s syrupy soft. I wonder if the zucc should have been drained of water? I used finely shredded zucc from the freezer and as it thawed, it released lots of water, as it’s usual, and I poured off maybe half of it by accident anyway.
Ok. It was certainly not loose once I let it rest on the counter. Thickened you’re just right. And on toast this is super good. Maybe it was just that I was tasting it plain and it was a little strong that way. Loving it now!!!
Im just thinking, since Zucchini takes on the flavour of whatever you put with it, you could use any kind of juice! I have a couple of buckets of red currents that will make a few jars of my favorite jelly, but if I put the red currents in with the zucchini!!!!! or how about using cranberry juice! or peace/mango!!! yuppers, ya gotta know Ima tryin this out!!!

The number of pots of jam my mother made while I was growing up and I've made as an adult. Never once was there that much sugar used! I normally use 2 cups. Good idea though. if I get a bunch more zucchini, I'll make my own version.

I have done a nutmeg cake with an apple butter filling and caramel icing. I'm thinking it could be similar. You are so very welcome ;)
