You’re probably thinking of continuity probes.
Submersible transducers use a special crystal that can change current based on how much head is around it, producing an analog signal.

Future coax tip, stretch and wrap the butyl rubber tape around the connectors like you did the electrical tape, it’ll seal the connector much better

Nice job overall. I presume this is not the first one you have done. Transducers I have used in the past hang in the air and point at the liquid level from above and calculate the height by measuring the delay in the ultrasonic pulses. I don't understand how the transducer you installed can detect the liquid level while being submerged.

Another tip, if you do those MC4 style solar panel connectors or other open barrel style crimp connectors, it’s definitely worth investing in the proper open barrel crimp tool. It’s infinitely easier than using regular crimpers and you get a way better connection.
