Great instructional video. Fire management is part of the BBQing experience. I know that hardcore pellet grill owners get really defensive about it being real BBQ but, truthfully, real BBQ is about controlling the cooking conditions. Anyone can hit a button and come back hours later. A video on how to use a Weber 22” for smoking would be really appreciated.

I actually just got a used char griller side by side gas grill with a smoker and a fire box today. This video explained a lot and had good tips that I think should make my first cook a success. I actually thought you wanted lots of white smoke but now I understand that’s not the case. Thanks mate.

I've got the same grill. Love it, great value. A couple of points I picked up over the years - I don't spritz before adding fuel as it picks up more of the dirty smoke that goes on for a short time until splits catch. I grabbed a Reesibi 90W Electric Air Duster, I drop a small plate I made over the firebox vent into the chamber to prevent ash blowing in, this this thing RIPS. 30 seconds and everything in the firebox is lit & it'll blow out all the ash too - but, it is a bit messy.

I just got my first smoker yesterday, been doing my smoking on a Weber kettle. It's basically the exact model in the video, the smoker I have. I made some food on it last night and I was having trouble keeping the temperature under 300-350. This is the nicest chargriller smoker I've seen. I started on a chargriller, but mine was POS with gaps all the way around, didn't have an inset door like yours, just top half barrel and bottom half so wasn't good for keeping heat in.
My fiance actually just got me one of these grills with offset smoker for an early Father's Day present. Looks like a bit of work but I'm so excited to start churning out some BBQ
I started on a big stick burner, then bought a offset and weber kettle. I purchases a rectec pellet grill, cooked ribs,pork butter, wings,chicken and prime rib. I gave it to a friend as I didn't enjoy the flavor and missed doing the cook management.
@@SkunkMonkey991 Agree 100% mate, I've got a Traeger and on balance have enjoyed it. The problem is everything tastes the same - you get different pellets but they don't change overall flavour. Some things (e.g. pork and lamb shoulder) I like on the Traeger. Cooked nice chicken wings but have to cook super hot and at risk of the auger pellets catching alight. Been thinking of an offset for a while and I like this channels videos to help me get started with cook management. The guy in the video does a really good job of explaining things.

I currently have an 8kg ham in my offset smoker. The best X-mas ham ever is done this way. Sure it takes 8..10 hours but you can do for example a salmon for lunch on the side. I put a rye dough coat on my ham. The combination of roasted rye and smoke is something you just can´t beat.

Great video. I just tried my 1st smoke over the weekend with my char grill offset but maintaining the temp was a bit difficult. I found myself constantly adding more charcoal and wood splits. I noticed you never once added charcoal. Only wood splits. What am I doing wrong? I also do not have a thermometer to monitor the actual temp as you do, so I know I need one of those. Any suggestions? Thx in advance
I wonder what you think about trying to keep the fire near the back of the fire box and putting your next split in the box but not in the fire to decrease the catch time for the new log. This is how I've done it but seeing your video I wonder if it makes any difference.

Hey mate! Don't stress, seriously as long as the temps are between 225-325 you are sweet. If they overshoot, shut your firebox vent a touch and let it ride. You are going to get fluctuations in an offset. Just don't panic, keep that smoke clean burning and enjoy.
Since this video is for beginners, I noticed that you didn't mention the wood you used at all. I have a lot of sumac trees on my property the wood isn't good for anything else should I try that in my smoker?

Hey so I've got a question if anyone could help me that would be really appreciated. So I see people using coals brickettes and wood splits for there offset smoker. How do you use Western Hickory WoodChips on an offset smoker? Would you use brickettes for the cook and continue to add chips to the burning brickettes or coals? Very very new to this method of BBQ Thanks in advance
Id get my coals hot, and just toss the chips in there. I've done it with my webber and never really had an issue. Id get a tin can ( make a mini barrel stove) and fill it full of chips, once it got hot I'd put the can in there. I'm also fairly new to offset smokers so i couldn't tell you how much you'll need to keep the smoke consistent in one of these

You don’t have to. Using drip trays helps avoid clean ups. Most of the time a quick brush out does the trick.

Just got a charcoal grill with the smoker offset and I'm excited to experiment with smoking. This video helped answer a lot of questions. Any recommendations on the instant read thermometer and in the grate thermometer?

Hey so I've got a question if anyone could help me that would be really appreciated.
So I see people using coals brickettes and wood splits for there offset smoker.
How do you use Western Hickory WoodChips on an offset smoker?
Would you use brickettes for the cook and continue to add chips to the burning brickettes or coals?
Very very new to this method of BBQ

Id get my coals hot, and just toss the chips in there. I've done it with my webber and never really had an issue. Id get a tin can ( make a mini barrel stove) and fill it full of chips, once it got hot I'd put the can in there. I'm also fairly new to offset smokers so i couldn't tell you how much you'll need to keep the smoke consistent in one of these
